LAD Birthday Blog Candy BABY!!!

Whoo Hooo! Have you been over to the Anniversary Celebration at Lizzie Anne Designs? Did you see the contest? WOWZA baby! I love those girls...... have I told you that? *wink*

Today is the day! It's my turn to give out birthday blog candy! I will draw a name tonight at 10:00 Pacific Time. The winner will get a surprise birthday present from Lizzie Anne Designs! How cool is that? I LOVE mail from LAD!

Okay... how about you leave me a comment and tell me your favorite summer time food. And, you all know how much I love it when you leave me recipes! LOL.... recipes are always optional though, but make sure you tell me one of your favorite summertime treats so that you can have a chance to get a surprise from Lizzie Anne Designs!

My favorite summertime food is anything BBQ'ed. I especially love to grill veggies in a Reynolds "Hot Pockets" tossed in a little olive oil.

We have an ice cream shop in town, Olsen's Ice cream, they are small and pack their own ice cream. We visit it a few time in the summer. They have alot of flavors...

Well it just so happens that I printed out a favorite to make for my son's upcoming third birthday party.

J-ello's Cool & Easy Pie
2/3 C boiling water
1 4 serving package Sugar Free Strawberry J-ello
1/2 C cold water and ice cubes to measure 1 C
1 tub Cool Whip
1 Prepared graham cracker crust

Stir boiling water into J-ello for two minutes to dissolve. Add ice water, stir until thickened and remove any unmelted ice. Whisk in 2 Cups Cool Whip until blended. Refrigerate approx 30 minutes or until mixture is thick and will hold it's shape. Spoon into crust and refrigerate 4 hours before serving. Top off with remaining Cool Whip.

BBQ Chicken(anything cooked on the Grill is Great!!) Homemade Beans..
salads!! This is a great recipe!!

Boston Baked Beans
The Way We Cook, by Sheryl Julian and Julie Riven
Serves 10
Ingredients
2 1/2 cups dried white beans, such as Great Northern or navy beans
1 tablespoon vegetable oil
2 medium onions, coarsely chopped
2 thick slices (about 1/2 pound total) flavorful baked ham (such as Westphalian or Black Forest), cust into 1/2-inch dice
1/4 cup packed dark brown sugar
3 tablespoons molasses
3 tablespoons maple syrup
1 tablespoon tomato paste
1 tablespoon dry mustard
1 tablespoon ground ginger
6 cups water, plus more as needed
1/2 teaspoon coarse salt, or to taste
1/2 teaspoon freshly ground black pepper, or to taste
Preparation:
Place the beans in a bowl and cover them with cold water. Set them aside to soak overnight, or for at least 8 hours.

Se the oven to 300 degrees.

Heat the oil in a flameproof casserole (I made due with a regular pot) and cook the onions over medium heat, stirring often, for 10 minutes, or until they soften.

Drain the beans and add them to the onions. Add the ham, brown sugar, molasses, maple syrup, tomato paste, mustard, ginger, and 6 cups of water. Bring to a boil and cover the pan.

Bake for 4 hours, checking the beans every hour, stirring, and adding more water to the pan, 1/4 cup at a time, if they seem dry. Add the salt and pepper. Let the beans settle for 15 minutes before serving, or let them cool to room temperature and refrigerate until ready to use.

To store and reheat the beans: Cover the pan and regrigerate the beans for up to 5 days. Set the pan over medium heat and stir the beans. If they have absorbed all their liquid, add water, 1/4 cup at a time, until the beans are a consistency you like. Reduce the heat to low and let simmer for 10 minutes, stirring often, until they are very hot....ENJOY!!!

My favorite summertime food is grilled shrimp. I buy the largest shrimp I can get (preferable NC shrimp) and then shell and devein it. I mix up olive oil, basil, lemon juice and garlic in a bag and marinate the shrimp for an hour and then throw it on the grill and grill it until it turns pink. My husband says it is the best shrimp he has ever eaten. I have some ready in our camper for our next trip. Thanks for the chance to win (and I enjoy the recipes too!!)

Smoothies are definitely my favorite from spring thru fall....but in the summers we always have a ton of bbq's and with them we love yummy potatoes.

Super easy, cheap and well, yummy!

6 potatos shredded (or one bag of frozen shredded potatos)
1 can cream of celery soup
12 oz shredded cheddar cheese (medium works well for this)
8 oz of sour cream
1 onion chopped
2 cloves of garlic roughly chopped
butter.

Take the onions, garlic and a tablespoon of butter and saute them in a pan until they are golden brown.

Place them in a large bowl and add all the other ingredients reserving 2-3 Tbsp of shredded cheese.

Grease a large baking dish 9x11 or two smaller ones. Add the mixture and place aluminum foil over it.

Bake for 1 hour at 325 degrees.

Uncover and sprinkle remaining cheese and bake for an additional 10 minutes. The top cheese turns golden brown and leaves a nice crispy crust!!

My family loves to cook on the grill in the summer! I love to marinade meat during the day and when I come home from work, fire up the grill and cook the meat and some veggies and wallah...you have a great meal! A quick veggie recipe is: Spray dull side of alum. foil w/Pam and slice thinly potatoes in the foil. Add slivers of butter and a little seasoning (your choice) and wrap up tight and throw on the grill for about 30minutes and you have wonderful, easy potatoes!

My favorite would be a Harry's Concrete! It is homemade custard with whatever you want mixed in. My favorite is Mint Chocolate Chip with Oreo's mixed in!! It is so YUMMY!!

My favorite summertime food is fresh homegrown tomatoes. And I have two favorite ways to eat them:

Fried red tomatoes with cheese melted on top (almost like pizza)

or just sliced, sprinkled with salt & pepper and thrown between two slices of fresh white bread.

YUMMY!!! Now I'm wishing we hadn't gotten our tomato plants in so late. I grew up on a farm where the standard was fresh tomatoes by the 4th of July.

My favorite summertime food is BBQ's and S'mores. Especially S'mores. My dad has a fire pit in his back yard and it is fun to go over there and have S'mores!!

One of my favorite summer time treats is Jersey fresh beefsteak tomatoes and sweet corn. We used to always stop at the road stands and pick some up on the way home from the shore. Yummy!

Summer means salads to me! I love tossing together baby romaine and iceberg lettuce w shredded canned chicken, tossing in asst'd fruits like pineapple tidbits, apples, grapes, mandarin oranges, and top it off w my fav summertime dressing - raspberry vinegrette - YUM (washed down by some Breyer's mint choco chip ice cream perhaps?)!

I love a good bbq.... and my absolute favorite is asparagus on the grill.

1 pound fresh asparagus
4 tablespoons olive oil
1 teaspoon salt

Trim off the tough bottom of the spear
Place asparagus on a plate. Drizzle oil over top and turn spears until they are coated. Sprinkle with salt.
Grill asparagus for 5 minutes over Direct Medium heat. Each minute or so, roll each spear 1/4 turn. Asparagus should begin to brown in spots.
Remove from grill and serve immediately.

It is DELICIOUS!!

My absolute favorite summertime food is corn on the cob! On the cob is the obvious way to eat it, but sometimes I trim it off the cob and fry it (saute' sounds nicer)it in butter, garlic, salt and pepper. Yummy! If you've never tried it, you're gonna love it. I'm anxious and excited to see what Lizzie Anne will come up with next! Happy Summer everyone!

There are SO many wonderful summertime foods I enjoy, but my absolute favorite is peaches! I love them in any form, but here is a great recipe from The Barefoot Contessa:

Peach and Raspberry Crisp

4 to 5 lbs peaches (10 - 12 large)
zest of 1 orange
1 1/4 cups granulated sugar
1 cup light brown sugar, packed
1 1/2 cups plus 2 to 3 T flour
1/2 pint raspberries
1/4 tsp salt
1 cup quick-cooking oatmeal
1/2 pound cold unsalted butter, diced

Preheat oven to 350 degrees.Butter the inside of a 10 x 15 x 2-1/2 inch oval baking dish.Peel peaches and slice them into thick wedges in a large bowl. Add the orange zest, 1/4 cup granulated sugar, 1/2 cup brown sugar, and 2 tablespoons of flour. Toss well. Gently mix in the raspberries. Allow the mixture to sit for 5 minutes. If there is a lot of liquid, add 1 more tablespoon of flour. Pour the peaches into the baking dish and gently smooth top. Combine 1 1/2 cups flour, 1 cup granulated sugar, 1/2 cup brown sugar, salt, oatmeal, and the cold, diced butter in the bowl of an electric mixer fitted with a paddle attachment. Mix on low speed until the butter is pea-sized and the mixture is crumbly. Sprinkle evenly on top of the peaches and raspberries. Bake for 1 hour, until the top is browned and crisp and the juices are bubbly. Serve immediately, or store in the refrigerator and reheat in a 350 degree oven for 20 to 30 minutes, until warm.

My favorite summer treat has to be Fresh Corn Salad, a recipe that can be found in "The Barefoot Contessa Cookbook" by Ina Garten.

The salad goes so well with one of my other favs, medium rare New York strip steak, on the grill, off course!

This is not just a summer recipe. We just tend to people over more often in the summer and I use this recipe a lot.

Cheese Ring

An appetizer cheese spread with pecans
accompanied with strawberry jam.

Ingredients:
2 cups grated cheddar cheese
¼ cup mayonnaise
1 3-ounce package cream cheese
1 cup chopped pecans
1 small onion, grated
½ teaspoon black pepper
½ teaspoon garlic salt
dash of cayenne pepper
1 (8 oz) jar strawberry jam

Directions:
Combine all ingredients except preserves
in a food processor. Mix and refrigerate for
2 hours. Scoop mixture onto a platter. Use
your hands to mold mixture into a ring (I suggest
a sheet of wax paper between your hands and the
mixture to prevent melting and stickiness).
Spread strawberry preserves in center of ring
and serve with wheat crackers.

Number of Servings: 4 cups

Strawberries!! By themselves, dipped in yogurt, cut up in a salad, strawberry pie, strawberry cake, strawberry pretzel salad!

Pretzel Salad
2 cups pretzels, crushed
2 T sugar
1 pkg 8 oz. cream cheese
3/4 melted butter
9 oz. whipped cream (I use Cool Whip)
1 cup sugar
2 10 oz. pkgs. frozen strawberries
1 large box strawberry jello
2 cups boiling water
Mix pretzels, butter, and 2 T. sugar. Spread in 9X13 pan. Bake at 400 for 8 minutes.
Beat cream cheese and 1 cup sugar until smooth. Fold whipped cream (that has been whipped) or Cool Whip. Spread over cooled pretzels. Chill.
Mix boiling water, jello, and add frozen strawberries. Stir until thawed. Let thicken. Pour over top of cream cheese mixture. Chill until set. Cut into squares.

I love Pasta salad and it is so easy!! I get the garden rotini noodles cook them and then add 1 yellow, 1 red and 1 orange bell pepper. I also throw in some grape tomatoes (cut in half), cucumbers, and red onion. I then poor in a bottle of italian dressing. Mix it all together and then top with lots of feta cheese. It is so yummy, I think I need to make some now that I have described it to you!!!

I have lots of favorite summertime foods, but the first that popped into my head is cold watermelon, eaten outside, so I can get messy and then just hose off or jump in a pool. Yay! :-)

My favorite food for the summer is a 7 layer salad. You start with a layer of lettuce, then cucumbers, tomatoes, green onions,cheese,chili beans, crunched fritos and then 1 bottle of ranch dressing poured on top about 1/2 hour before you are ready to eat it.

My favorite recipe is Ice Cream Sandwich cake...yum!

ICE CREAM SANDWICH DESSERT

1 box ice cream sandwiches
1 lg. container Cool Whip
1 Butterfinger or Heath bar

Layer bottom of dish with ice cream sandwiches. Next, layer with Cool Whip. Repeat layers. Top with crumbled candy bar. Freeze until time to serve.

Fresh blueberry pie! I live only about 10 minutes away from blueberry farms where you can pick them and actually afford to buy lots (because you NEED lots for this pie)! Anyway, you can use either a baked pie shell or a cracker crumb one....you fill it with fresh blueberries (1 pint (at least!)). Then combine 1 tbs flour (or corn starch), 1 tbs lemon juice and 1/2 cup sugar. Mix it with another pint of fresh blueberries, then put them in a pan and cook until the berries pop and create a sauce, stirring often! Then pour this Over the pie filled with fresh blueberries. Let cool and set, and serve smothered with freshly- whipped whipping cream! YUMMYYY! It is the best-darned summer pie EVER!

Fun, fun, fun! My favorite summertime food is watermelon and corn on the cob. A weird combo I know. . .but when I was a kid, we stayed at my grandparents house for a time and when it was really hot, we'd have those two things and eat in the basement where it was cool. And it brings back good memories! So to this day, watermelon and corn on the cob scream "summertime" to me!

My favorite summer food is my homemade salsa. I guess it can be a year round thing if you use store bought tomatoes but I like using my fresh grown ones. I just cut up tomatoes, green/red peppers, onion, hot peppers and garlic. I add vinegar & salt and you are ready to munch.

I just made up a batch of my favorite summer time treat :-) I tried for many years to like guacamole, but just couldn't stomach the straight avocado taste. Last summer we were at my brother's for vacation and he made up a batch that knocked my socks off. I finally realized as long as it has *stuff* and I mean lots of *stuff* in it, I love it!!! It's now a summer staple in our house :-)

4 Avocadoes - keep the pits
2 Roma Tomatoes
2 Green Onions
1 Clove Garlic
1 Jalepeno, seeds optional
8-10 sprigs fresh Cilantro
1/2 Cup corn
Dash of Salt
1 Tbsp Lime Juice

Ingredient quantities can be adjusted to taste :-) Fork mash the avocadoes. Finely chop tomatoes, onions, garlic, cilantro and jalepeno. Mix them together with remaining ingredients. Put the pits in the bowl after it's mixed - they will keep the guac from turning brown! Let the flavors mingle for several hours or over night for best taste!

My favorite summertime treat is fruit. I love to make a large fruit salad with strawberries, grapes etc. The more the merrier. Summer fruit is almost better than chocolate.

Summertime means BBQ - so anything BBQ'd - YUM!

I love to do steak tips. I buy sirloin tips and cut them and remove as much fat as possible. I use BUTCHER BLOCK TERYAKI sauce - it is AMAZING. Marinate the steak in that for 5 hours and grill - DEEEEELISH!

Fresh corn, grilled, boiled however I can get it. Instead of the traditional butter, I like mayonaise on mine. What a delicious flavor and I really don't like mayo. But on corn, OH My!.

Okay, My favorite summertime food is buffalo wings!!!!! I like a little heat in my summer.
As for a recipe, everyone dies over my really simple chili dip.
2 cans of Hormel Chili
4/8 oz. of Cream Cheese
Nacho Cheese

Take a microwavable dish and put the cream cheese, then pile on the chili and lastly the nacho cheese.
Heat in the microwave for 2 minutes. Then stir it up to melt everything together. Then microwave for 1 minute more and serve with nacho chips on the side. Everyone loves it. It doesn't look pretty but it taste great.

My husband is the absolute best BBQer/smoker in the world. His smoked salmon, pulled pork with blue cheese and filet mignon are incredible and I love it all anytime but he grills most in the summer.

I love homemade ice cream in the summertime!!! My favorite super-easy recipe is

1 gallon chocolate milk
1 thawed container of whipped topping

Combine in ice cream machine, churn per machine's instructions, and enjoy it when it's done!! Tastes just like a Wendy's Frosty!

My favorite is frozen fruit smoothies. I just pour some apple juice in the blender along with my favorite fruit (that I've prefrozen) and blend it a few times.

My favorite Summer time goodie is Chocolate Eclair cake! Yummmm-o!

1 large package French vanilla inst pudding
1 large container Cool Whip
1 package Graham Crackers
1 tub chocolate frosting

Mix pudding and cool whip. Layer graham crackers in bottom of baking dish and then spoon mixture over crackers. Alternate layers of crackers and cool whip mixture ending with crackers. Remove lid from frosting and microwave for 30 seconds. Pour over crackers and refrigerate! Enjoy! : )

My favorite summertime food is what we like to call "fluffy stuff"! :D What it consists of is a bag of marshamallows, a container of cool whip, a bunch of cut up strawberries (or you can get the frozen strawberries) and a package of strawberry jello! You boil the jello like it says on the box and then mix it in with all of the other ingredients! The end results are SO yummy! :D I am so excited for Lizzie Anne's party!

Ingredients:

* 1 20-oz. can crushed pineapple, undrained
* 1 10-oz. package frozen sweetened sliced strawberries, thawed
* 4 medium ripe bananas, cut into chunks
* 1 cup cubed cantaloupe
* 1 cup cubed honeydew
* 2 1/2 cups water
* 3/4 cup orange juice concentrate
* 3/4 cup lemonade concentrate
* 6 liters lemon-lime soda, chilled

Directions:

In a blender, process the fruit in batches until smooth. Pour into a 3-quart bowl, preferebly one with a spout. Stir in the water and concentrates. Divide into two freezer containers. Cover and freeze until icy. To serve, spoon 1/2 cup into a glass; add about 1 cup soda.

Yield: 20-25 servings

My favorite food in the summertime is Key Lime Pie- yum! If you follow the recipe on the lime juice bottle, it only requires 4 ingredients (juice, eggs, graham cracker crust, and whipping cream) and 15 min to bake. Super simple, but people think you are a genius!

Strawberry Pretzel Jello Dessert
2 C. Sugar
1 C. Melted Butter, unsalted
1 8oz. Package Cream Cheese, softened
4 C. Pretzel Sticks, broken into small bite-sized pieces
1 16oz. Container Cool Whip
1 Package Wild Strawberry Jell-O
1 Container or Package of Frozen Strawberries

First Layer:
Add 1 C sugar and melted butter to broken pretzels and mix until pretzels are coated. Place in 9 x 13” pan and bake at 350° for 15 minutes. Cool until completely chilled so it does not melt the second layer (I place in refrigerator).

Second Layer: Mix 1 C sugar, cream cheese, and cool whip. Spread evenly over pretzels and place back in refrigerator while preparing next layer.

Third Layer: Mix jell-o with hot water as package directs. OMIT cold water and add frozen strawberries. Carefully pour over cream cheese mixture, use caution because it may spill everywhere. Chill in refrigerator until jell-o is set. Cut into 3x3” squares.

My favorite summertime food is fresh-picked bi-color corn. I peel off the outer leaves, chop off the top with the silk, seal it in foil with a little water, and steam it on the BBQ for 20-30 minutes. Easy and oh so yummy!

My favorite summertime treat is ballard bisquits. This is a campfire treat.
You take a wooden dowel and spray with Pam(or equivelant) take refridgerated biquit dough and stretch one over the dowel and then brown over the fire. Then fill with your favorite pie filling, frosting, or whatever else you want. My favorite is buttercream frosting with cinnamon and sugar. YUM!

BBQ'd veggies with Renee's feta dressing. Zucchini's, red and orange peppers, mushrooms, sweet onion, little potatoes with dressing all over. Wrap in tinfoil and bbq until potatoes and veggies are soft, but not too soft. I am off to vacation this coming Sat. and it's on the list of meals for the week.

I'm excited about LAD's birthday! No recipe required for my fave summer treat...it's ICE CREAM!! Not that I only eat it in the summer, but here in New England we enjoy making it an event. Taking a ride to a favorite (or new to us) place where we can order ice cream at a take-out window and savor it on a summer evening is all part of the fun!
