3 cans of tomato soup
1-2 cans of red kidney beans
l tsp cumin

Happy Blogaversary to YOU!!
This is so yummy, I add chicken. And no panini press here, I use a skillet or toaster.
Apple-Cheddar Panini
If you don’t have a panini press, just use a non-stick skillet to make these tasty sandwiches. Just about any cheese can be substituted for Cheddar.
Ingredients
8 slices whole-grain bread
1/4 cup low-fat honey mustard
2 crisp apples, thinly sliced
8 ounces low-fat Cheddar cheese, thinly sliced
Cooking Spray
Directions
Preheat panini press on medium heat. Lightly spread honey mustard evenly over each slice of bread. Layer apple slices and cheese over 4 slices of bread, using about ½ apple and 2 ounces of cheese for each sandwich. Top each with remaining bread slices. Lightly coat panini press with cooking spray. Grill each sandwich for 3 to 5 minutes or until cheese has melted and bread has toasted. Remove from pan and allow to cool slightly before serving.

Happy Anniversary Cammie! This is one of my very favorite recipes (I have it memorized)! It's super easy, fast, and sooooo yummy!

Tortellini with Garlic Chicken Sauce

What you'll need:
1 red bell pepper
3 Tbsp butter
4 cloves of garlic, crushed and chopped
10 fresh basil leaves, chopped
3 T flour
2 c heated chicken broth
1 lb cooked tortellini
1 c grated fresh Parmesan cheese
Salt and pepper to taste

Cut red pepper in half and remove the seeds. Brush with olive oil and place cut side down on cookie sheet. Broil 6 minutes in the oven. remove and let cool. Peel off the skin and dice. Heat butter in pan over medium heat. Add garlic and basic, cook 2 minutes. Sprinkle with flour, mix and cook 1 minute longer. Pour in hot chicken broth and whisk. Season with salt and pepper to taste. Cook sauce for 6 minutes over medium heat. Add pasta to the sauce. Toss and add half the cheese. Stir in diced peppers and simmer 2 minutes over low heat. Top with remaining parmesan to serve.

Enjoy!

Love your blog Cambria...here's my family's favorite recipe:

Sour Cream-Chicken Enchiladas
2 cans cream of chicken soup (2reg. or 1 large can)
1 can chopped green chilies
1 lg. carton sour cream
4 c. cooked shredded chicken
12-18 flour tortillas
1½ lb. shredded colby cheese
Mix together the soup, chilies and sour cream. Grease a 9 X 13” baking pan. To assemble, place meat in a row across bottom of tortilla. Top with a spoonful of sauce and sprinkle with cheese, then roll up. Repeat with remaining tortillas. I like to thin the sauce to nearly pourable gravy-like consistency, by adding milk. Pour the remaining sauce on top of the rolled enchiladas and top with remaining cheese. Cover with foil. Bake in preheated oven at 350 degrees for approximately 45minutes until heated thru and bubbly.
This recipe is extremely versatile…could use turkey, hamburger or shredded beef.

Congrats on your anniversary!! I love your work and ideas you have.

Thanks for doing this, I'm going through blog and getting some easy dinner ideas too!!

One of my kid’s favorites and most asked for things, as a happy accident. I'd promised them Shake and Bake chicken and was out and didn't have bread crumbs or anything to make my own........only thing I had in cupboard was a Box of Cheese Nips, so we now make:

Cheese Nip Chicken

Take 1 Box of Cheese Nips and crush, put onto plate

Take 1 Can Cream of Chicken Soup (whatever your family likes) opened into shallow bowl/dish.

Take Chicken Breast and pound them flatter (not necessarily flat, but not real thick, lol).

Dredge Chicken in soup and then into Cheese nips crumbs.

Place onto Stoneware Bar (cookie sheet) and bake at 350 for about 20 minutes, Depends on how many you are doing and how thick you leave chicken.

I make up mashed potatoes or brown rice with chicken flavor and a veggie and my kids ask for this.

My dd, who was 5 at time, told my dh, "Daddy, this is so easy, even YOU can make it!" I wanted to cringe, but he laughed and said they'd have to walk him through it next time I was at a show.

Hubby has made this and what we’ve done for variety, if we feel like spicing it up, add some garlic and SouthWest Seasoning. Whatever “flavor” or spice you wanted, add it to your crumbs before coating chicken.

Enjoy!

Lisa

pick me pick me! ha ha ha. Got some CUTE CUTE CUTE stuff you have been making :)

So for the dinner thing.....That's easy! Go over to Costco (or Sams Club) and get something that is already made! They have awesome prepared stuff in the freezer sections...over in the meat sections. You CAN'T go wrong :) Grab a bag of the fancy smanchy salad stuff that has all the goodies in it -- even the dressing comes in there. Then get a nice bread and BAMM!! Yer dun!

Or...order take out from the Outback :) Pick it up curbside and take it home.

Happy 1 year! I tried the McCormick slow cooker packet & believe it or not it is delicious! You put boneless, skinless chicken in the crock pot, mushrooms, mix the packet with stewed or chili ready tomatoes & I used tomato sauce instead of paste. Pour the tomato mixtue over the chicken, put the lid on and walk away....easy,easy,easy and good!

I love these quick and easy tortilla wraps...

1 tbsp Uncle Dan's Ranch Mix
1 tbsp milk
8 oz package cream cheese

Blend together until smooth

Spread thin layer over a large flour tortilla, top with a thin layer of baby spinach, a thin layer of smoked turkey, and a thin layer of swiss cheese.

Roll tightly, cut in 1/2 slices and secure with a toothpick. They are great!

Good luck! Carmen

Chicken & Rice
Mix 1 1/4 cups uncooked regular rice, 1/2 t. salt, 2 cups water, 1 can condensed cream of chicken or mushroom soup in 13x9 pan. Place chicken breasts/thighs or whatever you have on hand on top. Bake in 375 degree oven for 1 hour or until meat is done.
(can substitute pork chops for chicken) (if you want more rice, change proportions to 2 cups rice, and 3 cups water) Enjoy!

Wow, what great candy you're offering! Count me in for the running! And, a super simple dinner could be taco mac & cheese. make mac & cheese and throw a package of taco seasoning in it. Serve with a side of mixed vegetables, or throw in cooked peas into the mac & cheese to force the veggies into the meal. My DD and I love it!

Really easy Chicken casserole

put skinless chicken breast in the bottom of a casserole dish. Layer sliced swiss cheese on top of that then cream of chicken soup. Then sprinkle stove top stuffing (unmade) on the soup. Put in 350 degree oven for about 45 minutes to an hour until chicken is done.

Thanks for the awesome blog. Congrats on the blogaversary.

How about a 1 dish chicken type of casserole sort of:

1st layer is boneless chicken breast

Then bake according to the directions on the stove top box.

I have been stamping for a couple of years and you have given me so much inspiration. When I can't think of a new idea, you always have one.

One of my favorite winter meals is:

Vegetable Soup

1 lb. Lean hamburger
1 can diced tomatoes
1 can corn, drained
1 can vegall, drained
1 can chicken broth
1 can tomato soup
1 can mild chili beans

Cook hamburger, drain, then add all ingredients in a large soup pot. I also add cabbage which my family loves. Sometimes I even use chicken instead of hamburger. It is always a hit either way. Hope you enjoy!!!

Stick your roast in and season. Cover your roaster with tin foil and seal the edges. Place in oven at 180 to 200 degrees for 6-7 hours. When done, you get a roast that falls apart and gravy to boot!

Melt butter with some fresh garlic..then slowly add heavy whipping cream...thicken a bit...add some grated parm cheese..towards the end sprinkle with basil and (my secret, although not after I post it here :-) is add a splash or two of lemon juice. Pour over cooked fettucine and wah-lah...fetticune alfredo (homemade). I saute some shrimp or scallops in butter and garlic too (drain) and add to your sauce just enough to heat them up...then you have seafood alfredo! Yum! too easy...

I love your blog! I get so much inspiration from it!

My easy Mexican Chicken crockpot recipe is:

Add enough frozen chicken breasts to feed your family, and a large jar of salsa - cook on high for 4-6 hours, and then add a bag of cheddar cheese for the last 20 minutes. Mix it all together, make some Mexican rice from the package, and watch your family devour it ;)

Wow! That's some great candy! One of our favorite recipes is a taco casserole. Layer nacho cheese doritos in a 9x13 pan. Brown 1 lb of ground beef in a pan. Add a small can of chopped green chilies, can of cream of mushroom soup, can of cream of chicken soup, small jar of mild (or hotter according to your taste) salsa, and about 3 oz. of milk. Stir all of that and heat to until bubbly. Pour it over the chips in the pan. Cover with shredded cheese and heat until the cheese is melted. It's yummy. Thanks for sharing all your great stuff.

Happy Blogiversary! Your site and your projects always look great.

There's not much that's easier than a crockpot recipe.

We like chicken tacos. I put a few boneless, skinless chicken breasts (fat removed) in the crockpot with a bouillon cube (or a teaspoon of the powdered kind), about a half cup of water, and a package of taco seasoning. I let this cook on low 6-8 hours. Put the chicken on plate and remove any remaining fat. Then I shred up the chicken and add some of the juices from the pot to moisten it a bit. It's great in shells of tortillas with your favorite taco toppings. I try to throw in a little extra chicken so that I have enough meat leftover to freeze for another easy meal.

I'd love to leave a comment. Your blog is a breath of fresh air to me, you offer so much inspiration and fun projects!
I just put 'baked' chicken in the crockpot. Sometimes dinner just has to be simple and done before the rest of the day takes over.
Shake 3 lbs chicken pieces in 1 cup flour mixed with 1 t. salt and seasoning of your choice. Brown the chix lightly in oil, and put into the crockpot. Pour 1 c. water around the chicken and cook on low for 6 - 8 hours.
I hope I win! *wink*

Great blog candy! We really like Taco Soup. You need 1 pound hamburger-browned, drained and mixed with a taco seasoning packet, 1 can of pinto beans, chili beans, corn, stewed tomatoes, and Rotel diced tomatoes with chiles, 1 pkg dry Hidden Valley ranch dressing mix. Put everything in the crock pot (without draining the canned items) and heat it up! Serve with sour cream, shredded cheese and fritos or cornbread. So good, so easy!

My best dinner tip isn't a recipe, it's a PLAN! :-) I make a list of meals, purchase (or have on hand) all the ingredients, and then I have CHOICES! :-) What I have a hard time doing is picking out something!

Love your blog!

Wow, what yummy yummy candy! Pick me! One of our fav dinners is crab cakes and they are stupidly easy. Take the box of Zataran's Crab Cake Mix and add mayo, water and crab (usually I use immitation crab). Form into patties and fry! I've made them from scratch too with breadcrumbs and spices and that whole thing, but frankly, the Zataran's way is better.

The mix will either be by the canned tuna and such, in the fresh seafood department, or by the "ethnic foods" like boxed dirty rice.

Yum! Candy! Love your blog!

Here's a recipe for my husband's favorite meal...pork tenderloin.

Line a 9x13 pan with a large sheet of aluminum foil. Place 2 pork tenderloins in center of pan on foil. Sprinkle 1 packet of dried french onion soup mix over meat. Fill empty packet with water and pour water around tenderloins. Pull up ends of foil and crimp all edges to seal. Bake for 1 hour at 350^.

This recipe is so yummy and sooooo easy. The remaining juice is good on mashed potatoes.

ENJOY!

I love your blog! And I would like to share the easy but impressive recipe I made for Valentine's Day. What is impressive is that you use orzo pasta instead of time consuming risotto - it was declicious. I didn't do the broccoli rabe.
Happy Cooking!
Jo Ann Fannon (fannon@cloud9.net)
Steak with Quick Mushroom "Risotto"

2 tablespoons olive oil
1 1/2 pounds strip steak
Kosher salt and pepper
10 ounces mushrooms, sliced
1/2 cup dry white wine (such as Sauvignon Blanc)
1 cup orzo
2 cups low-sodium chicken broth
3/4 cup grated Parmesan
1 teaspoon fresh rosemary, chopped
1 bunch broccoli rabe
1 tablespoon fresh lemon juice

Heat 1 tablespoon of the oil in a medium skillet over medium-high heat. Season the steak with 1/2 teaspoon salt and 1/2 teaspoon pepper and cook, 3 to 5 minutes per side for medium-rare. Transfer to a cutting board; let rest.

Wipe out the skillet and heat the remaining oil over medium heat. Add the mushrooms and cook, 3 minutes. Add the wine and cook until evaporated. Add the orzo and chicken broth and simmer until the broth is absorbed, about 10 minutes. Stir in the Parmesan, rosemary, and 1/4 teaspoon pepper.

Steam the broccoli rabe in a separate pot until tender, about 5 minutes, as the orzo cooks. Drizzle the rabe with the lemon juice. Divide among plates. Serve with the steak and ?risotto.?

Note: Orzo, a rice-shaped pasta, is a speedy stand-in for the Arborio rice traditionally used in risotto. Cooking orzo in broth instead of water intensifies its flavor.

Yield: Makes 4 servings

I forgot to leave a dinner recipe so here goes. This is what I make on a night when I get home late from work and I need something hardy but quick...

Taco Salad
1 lb extra lean ground beef (or turkey)
1 can black beans
1 can corn niblets
1 package taco seasoning mix + water
dash of olive oil
Romaine lettuce
avocados
sweet onions
sweet red pepper
salsa
light sour cream
multigrain tortilla chips
shredded cheese (or cheese blend such as Kraft Tex Mex)

Brown ground beef in small amount of olive oil. Add black beans (drained and rinsed) and corn (drained). Add taco seasoning and about 1 cup of water. Cook until water is absorbed and sauce thickens.

Meanwhile shred lettuce, dice onions, peppers and avocados.

Put shredded lettuce on plate, top with handful of crumbled taco chips. Top with hot beef mixture, shredded cheese, sour cream and salsa. Add diced vegetables and enjoy!

This is really easy and you can basically make it with whatever ingredients you enjoy. Its also pretty healthy if you go light on the chips and use low fat ground beef. We sometimes used baked tortilla chips as well.

Here's an easy Shepherd's Pie recipe. My 16-y-o son is learning to cook and often makes it!

Brown 1 lb. ground beef, drain.
Mix in 1 jar beef gravy.
Place in bottom of deep casserole dish.
Drain 2 sm. cans corn and layer on top of meat.
Layer prepared mashed potatoes on top - we use Simply Potatoes or Bob Evans brand.
Sprinkle with paprika and dot with butter/margarine.
Bake at 350 deg. until heated through, about 25-30 min.

WOW, you have a lot of comments here...wonderful blog candy...Oh, btw...happy anny!!!!! Here's a recipe you may have never even heard of or seen, but once you try it...you'll be hooked:

TRASH CAN TURKEY
INGREDIENTS:

· aluminum foil – heavy duty

· 15 inch wooden stake – pecan wood

· 1 (12 pound) whole turkey, neck and giblets removed

· new 15 gallon heavy metal garbage can with lid – burn out the galvanization prior to using it

· 1 pair of welders gloves

DIRECTIONS

1.Lay about 3 long sheets of heavy duty aluminum foil out on the grass to make a square about 3x3 feet. Pound the wooden stake into the ground in the center of the aluminum foil.

2.Fill the lid of the garbage can with a large pile of charcoal, and light. Place the whole seasoned turkey (thawed of course) onto the stake, legs down. Turn the garbage can upside down, and place over the turkey. Place piles of lighted coals on the top, and around the sides of the can.

3.Cook for at least 1 1/2 hours, or keep going until coals go out. Do not lift can during cooking. Brush the charcoal off of the can, and lift off carefully as some heat may rush out when you lift the can.

4.Careful when removing the turkey from the stake – it tends to be falling off the bones and will get in the coal dust.

NOTE: This recipe is for a 12 pound turkey only…..I can’t guarantee that the results will be good if you stray from this weight.

Have FUN trying it...we never use the oven for turkeys anymore!!!!!

Ok here is a recipe that is nice and easy. Get 2 tubes of crescent rolls. Take them apart and overlaping slightly make an oval with them on a cookie sheet. Bottoms towards center of sheet and points out hanging onto workspace. In a bowl chop up 1/2 lb ham lunchmeat. I usually have them shave it so it is finer. add some shredded cheddar, chopped broccli flowers, and fine chopped onion. Bind it together with yellow or honey mustard. Amounts are to taste. Once that is mixed up mound it up around the middle of the oval and then start flipping in the points of the crescents and kinda squeeze them to the center. It will look like a fancy danish with a slit pattern. Bake for 20-25 min at 350. It is so yummy I usually need to make 2 to stasify everyone.

As for a recipe...I would have to say that my mom's recipe for chicken is super easy! Just chicken, Lawry's and black pepper. Preheat the oven to 350. Place chicken (I usually use the bone in chicken breast) in a pan then generously sprinkle with Lawry's Season salt and black pepper on both sides. Bake for an hour and a half or until it is done! Add your favorite sides and enjoy!

Congrats on your blogaversary! I have a very easy recipe that anyone can follow for dinner. It is a beef stirfry.
1 lb steak (I used sirloin steak)
1 medium onion
2 garlic cloves
1pkg snow peas(I used 9 oz frozen, but cooked then in micro before adding)
1/4 c. soy sauce
1/4 c. orange juice
2TBSP water
1tsp cornstarch

Spray nonstick pan with cooking spray. Cook onion and garlic cloves until tender. Add steak and cook until browned on all sides. Add cooked snow peas. Add soy sauce and orange juice to coat all ingredients. Mix water and cornstarch together BEFORE adding to pan. (this helps thicken the sauce). I serve it over brown rice.

Enjoy~

What great blog candy! You are so talented and so sweet to share all of your ideas with everyone!
Here is a recipe that I make when its cold and its heart healthy too, my kids eat it also!

1 pkg boneless skinless chicken breasts (3-4 breasts)
2 cans chicken broth
2 cans white or northern beans (drained and rinsed)
1 can black beans (drained and rinsed)
1 jar black bean and corn salsa
1 pkg (2 cups) of colby montery jack shredded cheese
Boil chicken until done, cut up into bite size pieces or shred with forks. Return chicken to pot, add all other ingredients except shredded cheese. Bring to a boil and reduce heat to simmering. About 30 min. before you are ready to serve the soup add the cheese. You can serve this over crunched up corn chips or not (I don't) and you can serve it with a dollop of sour cream. It has a tex-mex flavor and it is wonderful! I hope that you like it!

Wow! So much fun! Love the candy. We did an easy dinner last night actually. I throw chicken thighs, a can of broth, a can of tomatoes and green chiles in the crock pot all day on low. By the time you get off work the chicken is so soft and easy to shred. You can do whatever with it then. HJave some quick burritos, tacos or whatever and use the leftovers with some black beans for some yummy enchilada casserole!

What a beautiful idea a weekly blogcandy!!! I try it, of course! And I live you an italian dish: spaghetti aglio e olio:

Take some piece of garlic (one for two person) two or three for four or more), cut each one in two and put them in a large frying pan(better with teflon). Put also some red hot chili pepper (it depends how hot you love) and extra vergine olive oil (two spoon per person) and just a little bit of salt. Hi fire and when the garlic is gold (not black!) switch off the fire. Cook in many salted water the spaghetti, get of the water one or two minute before correct time and put them in the pat. Mix with medium fire for one or two minutes, put some cut parsley and, if you like, some parmigiano....Voilà!

Buon appetito!

Wow look at all that candy!! Haha. Looks great to me, why do you need real candy when you can have all that, and it doesnt even cause cavaties. My quick dinner is getting the seafood/crab salad that is ready made at Safeway and spreading it on dough spread out into a pizza shape. I usually mix the dough with some italian herbs to get a little extra flavor. Stick it in the oven at 350 for 25 min and Vola! You have dinner and a mighty tasty one at that. The crab salad has enough moisture that you dont need sauce or cheese or anything. Cheers!! Happy stamping, and cooking.

wow that blog candy looks good! One of my favorite recipes which is soooooo easy to make is Bow Tie Pasta with Alfredo sauce. You only have to buy 3 things: Bow Tie Pasta, Alfredo Sauce, and Spinach. You boil the bow tie pasta. In a seperate pan boil some spinach. Mix together when done and add a jar of Bertolli Alfredo sauce and heat it up. This is yummmmy!!! You can substitute the spinach with any other veggie like mushrooms, brocolli, or even add chicken.
