Copic Candy!!!

Copics anyone???? Look what Marianne at Copic Markers gave me to share!

I'm Baaaaaack! Oh baby..... I cannot even tell you how much fun I had with Marianne. I had to keep reminding myself to close my mouth. AMAZING. I would have paid SO much more for that class. I am going to be a Marianne groupie. If you are anywhere near Medford, OR this coming Friday (April 18th), you are CRAZY if you don't sign up and get Copic Certified. This class and Copic markers WILL BLOW YOUR MIND. I was gasping out loud. GASPING! I love Marianne and Copic Markers!!!! I had SO much fun!! I can't wait to share with you all the cool things these markers can do!

As soon as I arrived, I received three hugs from Marianne.... so thanks girls!! Marianne did indeed give me your hugs!! I got to meet stampers that are in some of my stamp groups... it was SO fun to put names to faces. I wish we could have hung out longer! Everyone was as excited as me.... so can you imagine? We all wanted to just bottle up Marianne and take her home (her AND her Copics).

If you leave a comment (I love easy recipes *wink*) , I'll have random.org choose a winner on Friday! Candy includes 1 Copic Wide Y15 (yellow), 2 Copics G14, G16 (Apple Green & Malachite), 2 Copic Sketch B21 & B23 (Baby Blue & Phthalo), 2 Copic Ciao E93 & E95 (Tea Rose & Flesh Pink), 1 Twinkling Like Stars Spica Glitter Pen and 1 Wine Copic Multiliner all in the little Copic Bag to go!

I have SO much to catch up on today, but hopefully this evening I can put together some of the images I colored this weekend. See ya soon... thanks for stopping by!

2 cups shredded cheese (I use cojack)
1 can mushrooms
lowry's seasoned salt to taste
3/4 lb of wide egg noodles, cooked

Easy Cheesy Cheesecake

2 pkg Philadelphia cream cheese, softned
1 can sweetened condensed milk
1 TBSP vanilla
1/3 cup lemon juice

Mix cream cheese and sweetened condensed milk until smooth. Add vanilla and lemon juice. Whip on highest speed that doesn't mess up the walls for 3 minutes. :-)

Pour into crust of choice (I love shortbread cookie crust!). Top with fruit if desired. Can serve immediately soft serve, or chill in refrigerator for an hour or so.

Yum!

This is wonderful. I hope that I can take a class one of these days. I've been looking but I haven't seen anything in the Milwaukee area.

Here's a great quick recipe for a fabo snack:

1 lb bag of stick pretzels
1 pkg Hidden Valley Ranch mix
a bit a cayene pepper and garlic salt (to taste - I use alot of pepper because I like it zesty)
3/4 cup vegetable oil

Put all the ingredients minus pretzels in a 1 gallon ziploc bag and smush to mix. Once mixed, add pretzels and mix around to coat. Pour into a bowl to allow to dry.

I get asked to bring this to EVERY party I go to. It's the best 5 minute $3 snack ever!

I am very jealous. One day I might be able to justify buying my own Copics. I used to love playing with markers but now I only have sad Crayolas and they just don't cut it most of the time. And to get to do a whole class on how to do it right? Awesome!

As for a recipe, here is a super easy cookie recipe that is fab. Fattening, but that's why you break it into little pieces! It also has no eggs and is perfect for serving to vegetarians.

Crunchy Chocolate Peanut Butter Chunks

1 cup butter, softened
1/3 cup smooth peanut butter
1-1/2 cups granulated sugar
2 tsp vanilla
3 cups all-purpose flour
Pinch salt
1 cup each semisweet chocolate chips and peanut butter chips
3 oz bittersweet chocolate, chopped

In large bowl, beat butter with peanut butter; gradually beat in sugar until light and fluffy. Beat in vanilla. In separate bowl, mix flour with salt; using wooden spoon, very gradually stir into butter mixture until combined. Stir in chocolate chips and peanut butter chips.
Gently squeeze dough in handfuls until dough holds together; pat into ungreased 17- x 11-inch (45x29 cm) rimmed baking sheet. Bake in center of 350 F oven for 30-40 minutes or until firm to the touch and golden. Let cool on sheet on rack.
In bowl over saucepan of hot (not boiling) water, melt chocolate, stirring occasionally. Drizzle over cookie. Let cool completely. Break into pieces. Makes 72 pieces

Love the idea of copics, but have never tried them. Ever since I started stamping, I've been trying to recreate that watercolor look and I think copics might be the answer! I checked their Website and it looks like they are going to have a class in Illinois this summer. I have to sign up for that as soon as the details are posted!

Would love to win!!! If I don't, I'll keep trying...in the meantime, here's a quick crockpot recipe! Two cans of Campbell's Cream of Mushroom soup at bottom of pot. Brown a an eye roast (3 or 4 pounds). Place on top of soup. Cover with two more cans of Cream of Mushroom and cook on low for 6 to 8 hours. Yum! Gravy is to die for and we always get two meals. 1 - Roast Beef and mash potatoes and 2 - Hot Roast Beef Sandwiches! Enjoy!!

Just came across your blog, can't wait to read more but here is a recipe!
Wonton Soup
This was totally amazing, I can't wait to eat it again!!

Wontons
¼ pound ground skinless chicken breast
2 scallions, finely chopped
1 teaspoon minced peeled fresh ginger
1 teaspoon reduced sodium soy sauce
1 teaspoon cornstarch
¼ teaspoon Asian (dark) sesame oil
1/8 teaspoon salt
1/8 teaspoon freshly ground pepper
16 (3 inch) square wonton wrappers

Soup
4 cups low-sodium chicken broth
1 tablespoon reduced-sodium soy sauce
½ pound bok choy, coarsely chopped (about two cups)
4 scallions, cut into ½ inch pieces

1. To prepare the wontons, combine the chicken, scallions, ginger, soy sauce, cornstarch, sesame oil, salt, and pepper in a bowl’ set aside.
2. Arrange 8 wonton wrappers on a work surface. Place 1 teaspoon of the chicken mixture in the center of each wrapper. Moisten the edges of each wonton wrapper with water and pull one of the top corner diagonally over the filling to make a triangle. Press the edges firmly to seal. Bring left and right corners together above the filling. Overlap the tips of these corners, moisten with water, and press together. Place completed wontons on a baking sheet lightly covered with cornstarch and cover with a damp paper towels. Repeat with the remaining filling and wrappers, making 16 wontons.
3. To prepare the soup, bring the broth and soy sauce to a boil in a large saucepan. Reduce the heat to medium low and add the wontons and bok choy; simmer, stirring occasionally, until the wontons are cooked through and the bok choy is tender, about 10 minutes. Sprinkle with the scallions and serve.

Enchiladas
fill flour tortillas with browned beef or chicken, chopped onions, favorite shredded cheeses-we just use whatever is on sale or in frig- and roll up. Place in a greased 9 x 13 pan.
Mix together one can of tomato soup and one can of red enchilada sauce and pour over top of tortillas. Sprinkle cheese on top and bake at 375* for 25 minutes or until heated through. Serve with sour cream, guacamole, shredded lettuce and diced tomatoes.

Want to try a Hungarian dish?

Recipe:
-About half a sausage, sliced -- I use Hillshire Farms smoked kielbasa, lite
-4 to 6 hard boiled eggs, sliced
-3 cans sliced white potatos, drained
-onion, chopped
-1 reg size lite sour cream (16 oz)

Spread chopped onions in bottom of baking dish (any size). Layer half the potatoes on top. Layer all the sausage, all the eggs, and finish with another potato layer. No need to be precise. Spread the sour cream all over the top to the edges. Bake in 350 oven 45 minutes to an hour, until edges look a little brown and warm through. It's delicious either cold or warm the next day also.

Hope you have time to try it and enjoy it as much as I do!

Anonymous said...

Wow! I can't wait to see what you have to show us. I have never used the copics but have been drooling over them.

Easy Recipe? How about dessert?

Brownie Trifle
1 box of brownie mix baked & crumbled
2 boxes of chocolate instant pudding prepared
1/2 bag of heath bar pieces (can buy in pieces)
1 large tub of coolwhip or real whipped cream

In a trifle bow, layer brownie crumbles, pudding, heath bar pieces and cool whip. Repeat and finish with coolwhip. It looks really fancy if you top with chocolate curls. Yummy!

So you like recipes, eh? Ok, here's one the kids will love!
Marinate chicken tenders (or sliced, boneless breast)in buttermilk with a few drops of hot sauce for several hours. Roll them in a mixture of corn flake crumbs with a few tablespoons of grated parmesan cheese. Cover a baking pan with RELEASE foil (makes for super easy cleanup) and add a tiny drizzle of oil. Place the chicken on the baking pan and bake at 400 for about 30 minutes or until done. Enjoy!

Here is a easy yummy fattening recipe!! Please forgive me for sharing!!

FETTUCCINE ALFREDO

16 fl oz heavy cream
1 stick butter (unsalted)
1 tub of de Giorno (refrigerated) Grated Parmesan Cheese (must be grated)
Pepper (to your taste)
Nutmeg (just a dash)
1 box of Fettuccine Noodles
Add shrimp, chicken or whatever else you want. But it is good plain.

Boil noodles according to box.
In sauce pan heat up cream until it is a little bubbly. Do not want it to boil. Add the butter and melt it completely in the cream. Now dump in the whole tub of Parmesan cheese and give it a stir. Let it heat up and thicken, about 10 minutes. Now it is ready to serve.

Great coloring and shading. One of my easiest recipes is for a fruit dip.

1 8 oz pkg cream cheese
1 jar marshmallow creme

stir together until smooth. Chill. Great with a fruit tray for a party.

I'm looking forward to seeing what you can do with these markers! Would love to try them myself!

Here's a really quick, yummy crock-pot recipe:
Crockpot Beef Pot Roast

1-1/2 to 2-lb. Roast (I used a larger one in my 6 quart Crock pot)
1 dry pkg. Good Seasons garlic herb dressing
1 dry pkg. Good Seasons Italian or Zesty Italian dressing
1 can of beer (not dark)

Place one envelope of dressing mix in bottom of crock pot. Place meat on top and sprinkle other dressing mix on top. Note: I combined the 2 dressings and used half under and the other half over the roast. Pour beer over all. Let cook 8-10 hours on low.

**NOTES: The beer breaks down the meat, so you can use cheaper cuts and it will still turn out tender.

Optional: To make gravy, take out the meat when it is done and keep it warm; then add 4-5 tbsp. flour and 2 tbsp. butter, stir into the juices well, and cook on High in the crock for 10 minutes.
The meat freezes well in its gravy.

heat oil in 12 in skillet over med-high heat. cook chicken in oil 5 min, turning once, until brown

Ok, so here's a super easy crock pot recipe.

Beef Tips on Rice

On low, Cook all day.
1.5 to 2 lbs of beef, cubed
1 Can beef broth
1 package Lipton Onion Soup

Make some rice right before you eat and you're done!

Super Easy and Very Yummy!!

Oh and if you like your sauce thicker, just save a tad of your beef broth in the fridge. Then about an hour before you serve mix the cold broth with some corn starch and then put in the beef tips. This will thicken up the sauce. ENJOY

Here is what we call Nancy's Made Up meal:
Ingredients:
London Broil for braising; large onion sliced thin, 2 Tbls olive oil, 2 tsp beef Better Than Bullion (it really IS!), 1 medium tomato or 2 romas, cut into small cubes, and Montreal Steak seasoning
Sprinkle steak season on both sides of meat. Put olive oil in Dutch Oven (I use LeCruset), brown meat 8 min each side, medium heat. Add Onions, saute 8 minutes. After onions are golden brown, add tomatoes, stir, and saute for about 5-8 minutes. Add 1.5 cups water and Buillion (enough water to just cover meat), stir, and bring to a boil. Cover and turn heat to simmer for 2-3 hours until very tender. Have a nice hot bread or roll on the side, rice , pasta or bulgur dish. Pour sauce over side dish. Enjoy!

Broccoli and Parmesan Casserole
Broccoli is one of the best vegetable sources of calcium. Here it's paired with a béchamel sauce thickened with cheese, which boosts the calcium even more. A short boil of the broccoli preserves the bright color for the dish.

Recipe: Choc. Clay

Ingredients:
10 oz. Chocolate [chopped or chips]
1/3 C. Light Corn Syrup

*the choc. can be subs. with almond bark [leave it white or add food coloring of choice], or colored candy disks can be used to create different colored clay.

Directions:
Melt choc. in mircowave 1 min., stir. If choc. is not completely melted, micro 30 sec. at a time until smooth. When choc. is melted, add corn syrup and blend. Pour mixture onto waxed paper sheets. Spread the choc. with your fingers until about 1/2 inch thick. Cover loosely with wax paper and let stiffen for a couple of hours or overnight. Choc. will become very pliable. Now play! It will harden after a few days and can be saved by storing in a cool dry place.
Adult supervision and PARTICIPATION is required for this fun.

Copics do so intrigue me!

Here's my simple easy recipe, I'm on a diet by the way, and needed something REEEAALLY good to make me feel like i'm still getting my fats...hehehe.

Creamy Cheese Stuffed Chicken

In a bowl combine cooked crumbled turkey bacon (two to three strips) and three wedges of laughing cow light garlic herb cheese (or one per chicken breast) and a handful or so of diced mushrooms.

Slice open uncooked (not frozen) chicken breast and stuff the filling in, pin it closed with toothpicks and bake until chicken is cooked and filling is oozing out the seams...mmmm. I serve with a side of asparagus.

While the rice is going, heat up a can or two of black beans in the microwave. Get the salsa, shredded cheese, and sour cream out of the fridge. Layer rice, beans, cheese, salsa, & sour cream on a plate. DING! Dinner's done! lol Great for those nights after stamp classes & whatnot, when you're trying to decide whether to eat a late dinner or just go to bed hungry. You could also add some chopped jalapenos if you like spicy.
Enjoy!

Here is a yummy FRESH breakfast recipe:

Get a ripe papaya and cut in half (half for you and half for another deserving person) Scoop out the seeds. Take a spoonful of cottage cheese (about a rounded tablespoon) and put in the middle. Then take vanilla yogurt and put like 3 or so spoonfulls in there too. THEN take sliced strawberries and put them all over the top. You can also maybe put a few little slices of banana - but just a few cause they have a powerful flavor. If you don't have strawberries you can use those frozen triple-berries from Costco - just thaw them first. They are way yummy on this too. Now just dig in by scooping out the papaya and eating together with all the goodies - but don't eat the skin -- yuck! OK...this is really the best EVER breakfast food! Had it in Hawaii and now make it at home whenever I find good looking papayas (to share with my good looking hubby) Enjoy

Sometimes I add a small can of green chilis too. We eat it with cheese and sour cream on top and tortilla chips to dip and scoop. It's quick and Yummy!

Shipwreck Casserole - a favorite from childhood

2 lbs hamburger
6 large potatoes - peeled and sliced
1 can tomato soup
2 cans (15 oz) kidney beans - drained

In casserole dish, layer in the hamburger (don't pat down just break it up and yes it goes in the dish RAW). Layer on the potatoes, spread tomato soup over top and then spread kidney beans on top. Cover and bake at 375 for about an hour - really depends on how thick your potatoe slices are. I do mine about 1/8 inch.

Here is a recipe PERFECT for a brunch that EVERYONE loves (truly!). I LOVE because 1) it HAS to be made in advance; and 2) does not require messy frying bacon; and 3) is simple and hearty. Enjoy!
Sour Cream Egg Casserole

½ large loaf day-old french bread, torn into small pieces
3 T. melted butter
1 lb. shredded Mexican 4-cheese (I started using 1/2 pound regular Mexican 4-cheese and 1/2 pound of the Mexican with jalapenos)
10 eggs
1/3 c. vermouth
green onion, minced
1 T. dijon
1 ½ c. whole milk (I use skim)
1/8 tsp. black pepper
1/8 tsp. red pepper flakes
1 c. sour cream (I use light)
½ c. grated parmesan cheese

Spread bread pieces in bottom of a well greased 9x13 pan, and drizzle with butter. Sprinkle with Mexican cheese. Beat together: eggs, vermouth, green onion, dijon, milk, pepper and pepper flakes. Pour over the bread. Cover with foil and chill over night.

Remove from refrigerator 30 min before baking. Bake covered at 325° for 1 hour. Uncover. Spread sour cream over eggs and sprinkle parmesan over top. Bake uncovered for 10-15 min, or until lightly browned.

I would LOVE a chance to win some copics. They are next on my list of major purchases. Here's an easy recipe for you. Kind of like lazy cabbage rolls, I guess.

Fry onions in a pan until golden brown. Add one jar of saurkraut (spelling?) and fry for about 20 minutes. I add butter to keep it from burning. Add some 1-2 cups of cooked rice and fry some more - stirring occasionally. All I add is pepper (I like lots of pepper). There you have it - easy peasy lazy cabbage rolls and it tastes great!

Juli Smith, said...

Oops! I forgot my recipe...we've had a few teaser warmer, more Spring-like days here in IL so we've been hitting the grill! Usually it's the smell of neighbors grills calling to us to bust out ours - but this year I think we may very well have been the first! So here's our fav grill recipe:
Potato Packets

Heavy duty alum foil
Non-stick spray
Potatoes (qty depends on how many people, we usually do 4 large for two adults and 3 little kids)Scrub and remove eyes from potatoes and cut into slices.
Carrots (cut into chunks)
Onion (cut into chunks)
Peppers - Optional cuz I don't like them but hubby does! (cut in chunks - colored peppers are the best, but green works too!)
Seasonings (our favs and standards are onion powder, garlic powder and Lawry's Seasoned Salt)

Heavily spray large rectangle of heavy duty alum foil with cooking spray. Spread chunks of vegetables into middle of heavy duty alum foil. Sprinkle with Seasonings. Dot with butter.

Seal up foil by bringing the long sides together in the middle, then folding over the edge several times. Then fold over the ends several times towards the middle. Basically you want to seal so everything steams inside the foil packet. Cooking time varies based on heat of grill. We use a gas grill - and usually cook on low or medium. Cooking time will also depend on how big and full your packet is (maybe make more than one packet?)For us, it usually takes 20-30 minutes for everything to cook through and not be soft/crunchy.

We got this idea from camping when we make these packets in the hot coals and around the edges of a campfire - only we use double and triple the heavy duty alum foil for that!

Yummy and easy to throw together - even the kids could do it! ENJOY!

My daughter would have a fit if I didn't at least leave a comment. She's 12 and has about 36 copics, whereas I have none. She loves them.

I am not a cook so my easy recipe would be this: 1. Open box of cereal, 2. Pour in a bowl. 3. Pour milk over cereal. 4. Eat with a spoon and enjoy!

I'm seriously jealous. Would love to test drive me some copics!
