This looks fantastic!! I just love those stamps! One of our favorite, and very fast dinners, is taco salad. I put chips on a big pizza plate, splatter on some refries, hamburger, and cheese...throw it in the oven just to warm it up, then pile on lettuce, tomatoes, olives, sour cream...mmmm. I'm getting hungry now!

I'm first? Well, I probably won't be by the time I finish typing my comment!

A really yum chicken recipe that I just tried for the first time this week is garlic cheddar chicken.

Preheat oven to 350F. Mix ~6T breadcrumbs, 3T shredded cheddar cheese, 3T fresh parmesan cheese, 1/4t basil, 1/4t salt, 1/4t oregano, and 1/4t pepper (I also added a bit of garlic powder cuz we love it so much) in a small, shallow bowl. Take 2 boneless skinless chicken breasts and pound thin (but not flat). Saute some fresh crushed or minced garlic in butter or olive oil until tender. Dip each chicken breast into the oil and garlic mixture on each side, then into the bread crumb mixture. Bake in baking dish for ~30 minutes, or until juices run clear. It's REALLY yum and REALLY easy!!

Wow, what a great collection of goodies! One of family's favorite quick meals is fancified beef ramen. I brown up some sort of beef (usually thinly sliced steak) and sprinkle on ground ginger. Once it's fully cooked, I set it aside I dump in veggies (broccoli is our favorite, but peas and/or carrots work well, too), two packs of beef ramen along with the seasoning packets, some minced garlic, a splash of soy sauce, and about two cups of water. Bring it to a boil and let it simmer until the veggies are tender. Stir the meat back in, and serve up!

Congrats on your blogerversary.

My kids love Cheeseburger Macaroni, but I won't buy that box kind. I boil a box of elbow noodles and brown some ground beef with some onion. Drain both, and put beef in bowl. Add as much ketsup to coat (about 2 cups). Stir in noodles. In a cassarole dish, add half of the mixture, layer with your favorite cheese, add rest of mixture, top with more cheese and a splash or 2 of milk. Cover with foil and bake in a 350 degree oven for about 45 minutes.

Wow, I'd love that blog candy! I love love love your blog and am so thankful for you sharing all of your creations. I would love to say I have a great recipe for you, but, let me tell you, I'm about as pathetic as it comes when it comes to cooking! I go to Pampered Chef parties and only by stoneware because I can reheat all my leftovers well on it--haha! Again, thanks for the candy--hope I win!

gail said...

This one I like, it's cheap and good.

1 lb ground beef
1 egg
1/2 tsp onion
1/2 tsp salt
1 Tbsp ketchup
1 Tbsp Worcestershire sauce

Mix the above together, roll in flour and "fry" like a hamburger. Once the patties are done, combine a can of cr of mush soup w/ 1/2 cup of milk or water and pour on the meat patties and let simmer for a bit. The soup mixture is great as a "gravy" on baked potatoes. Sometimes I double the soup mixture so we have enough "gravy"

Love your blog and all your ideas!
My favorite thing is the crockpot...put in some round steak or pork chops or chicken breasts. Sprinkle with seasoning salt and pepper. Mix 1 can cream of something (whatever you have works - mushroom, chicken, celery - the low fat stuff works good) with about 1/2 can water and some splashes of worchestersire sauce. Dump it on top and oook all day. The meat falls apart it's so tender. Serve over rice or noodles, with your favorite bagged salad or steamed veggie.

I've been a learker for a while of your post. I love your ideas. I am just beginning as a demonstrator and am a bit nrevous about coming up with some crafty ideas to share with others. You have definately inspired me.

Easy recipe for the crock pot:
diced potatoes and carrots
Sliced onions
pork chops (I use boneless but you could use the ones with the bone)
1 can cream of mushroom soup (no water or milk).
Layer in order given and cook on low for about 6-8 hours.

My family loves it and the pork chops just flake apart.

New Orleans style shrimp

3 tablespoons butter
2 garlic cloves, minced
1 teaspoon dried rosemary
1/4 teaspoon cayenne pepper
3/4 cup dry white wine
2 tablespoons Worcestershire sauce
pound uncooked large shrimp
4 cups cooked rice
Melt butter in heavy medium skillet over high heat. Add garlic, rosemary and cayenne pepper and stir 30 seconds. Add wine and Worcestershire sauce and boil until liquid is reduced by half, about 5 minutes. Add shrimp to sauce. Simmer until shrimp are just opaque in center, about 3 minutes for peeled or 5 minutes for unpeeled. Serve shrimp with rice.
Hope you like it!

here is what we had for dinner last night! It was yummy!

Corn Casserole

1 can While Kernel Corn, undrained
1 can Cream Style Corn
2 eggs, beaten
1 cup sour cream
4 Tbsp dry onion flakes
1 box Jiffy corn muffin mix
1/2 cup (1 stick) margarine

Combine both corns, eggs, sour cream and onion flakes. Add corn muffin
mix and mix well. Pour into a casserole dish (9x13 would be better I
think) that has been well greased. Dot with margarine. Bake at 350 for
45 minutes. Can also sprinkle 1 pkgs cheddar cheese on top before
baking.

Crispy Parmesan Chicken Strips

1 1/2 C seasoned croutons
12 1/2 ounces fresh parmesan (grated)
1 tsp dried parsley
1/4 tsp garlic salt
2 egg whites
1 Tbsp water
1 pound boneless, skinless chicken breast halves, cut into 1 in pieces
(about 3 breast halves)

Preheat oven to 450. Crush croutons in plastic bag. Combine cheese,
crouton crumbs, and seasonings and mix together. Whisk egg whites and
water in separate bowl. Dip chicken pieces into egg mixture and then
into crumb mixture and coat evenly. Arrange on a baking stone. Bake
14-16 minutes or until chicken is cooked through.

Congrats on your Blogiversary! Here is my favorite recipe - https://dinnerbydesignkitchen.com/

I actually don't cook dinner. I find that doing so cuts down on my stamping time. LOL! My husband and I go once a month and make our dinners in under 2 hours for the entire month. I'm never cooking dinner again.

More cool candy- maybe I'll get lucky this week! I hate to cook, so if you don't mind, I'll just steal some of these recipes LOL!

Anonymous said...

Yay! Happy Blogiversary! :)

One of my favorite recipes is something we call Tex-Mex Saucy Chicken. While I don't try to make a healthy version, I'm sure you could tweak the ingredients. I will try to give the specific measurements, but i mostly eyeball it...

1 package of boneless, skinless chicken breasts (contains 3-4 big ones)diced, 1 can cream of mushroom soup, 1 can diced tomatoes, 1 can of mexican corn, drained, 1 can black beans, rinsed and drained, a packet of taco seasoning mix and some salsa. First cook the diced chicken (I do this in chicken broth) and then add the soup, tomatoes, taco seasoning and salsa. I let this simmer for about 20 minutes. Then, add the corn and black beans. I let this simmer some more while I make some rice. When that's done we pour the chicken mixture over the rice and top with shredded cheese and sour cream!

Robyn said...

Congrats on a year. Way to go!!!

I love the idea of people leaving you recipes. I've scouted a few already...LOL

I made this last night and it's great.

The trick is the cooked chicken.

1 box of Rigatoni (or any hearty pasta)
1 can of cooked chicken (I'll usually throw in whatever chicken I have)
1 can of creme of mushroom soup (we use the very low fat one)
1 can of peas or 1 bag of frozen peas.
3/4c of Sour creme
1 1/2 teaspoons of garlic powder
2 1/2 teaspoons of onion powder
Parmesan
Pepper/salt

***Next time I might add some thyme to it to change it up for us.

Preheat oven to 375

Bring water to a boil add pasta.

While the pasta is cooking, in a large bowl add the rest of the ingredients -mix well.

When pasta is done put that in the mixture as well.

Grab a 9x13 casserole pan and do a light coating with Pam spray.

Put mixture in. If you like you can garnish it with Parmesan cheese.

Spray the top with pam, so that it doesn't burn.

Cook for 20-25 min. Let rest for 5 and you have a few great meals.

Hope that helps.

One of my favorite quick chicken dinners is to just coat chicken breasts in parmesan cheese and bread crumbs and either saute in olive oil or bake in the oven at 350 for about 20 - 25 minutes or until cooked through. I just pair that with green beans and rice or pasta with jarred tomato sauce and I'm good to go!

Cambria,

Thank you so much for the opportunity. Congratulations on your website being up for a year already! Whoo Hoo!

This is so easy and my mom calls it Noodle Delight.

1 small can tomato sauce (8 oz), 1 small can tomato paste, 1 pound ground beef, macaroni noodles, 8 oz. water, can of corn, can of olives, and green bell peppers, onion.

Cook noodles until soft. At the same time, in some oil, cook up the onions and the ground beef (drain). In a 9x13 pan, combine noodles, beef, onion, corn, bell peppers, olives, tomato sauce, tomato paste, and water. Top with cheese and throw it in the oven at 325 for about 1/2 hour. It is great on a cold day and soooo easy! I hope you like it.

This is a great fruit (especially apples) dip!

Ingredients:
8 oz. cream cheese
1/2 c. brown sugar
1/4 c. white sugar
1 t. vanilla
1/2 package "Skor" or "Heath" toffee bits

Directions:
Soften cream cheese. Mix until creamy. Add sugars and vanilla. About 1/2 hour before serving add the toffee bits. This is best the first day you make it because the bits will go soft after that, but it is still VERY tasty. For anyone with nut allergies the bits do say that they contain nuts.

What a great give away! One of my favorite easies is Mostaccioli. You can used penne noodles if you can't find Mostaccioli. All you do is boil the noodles then layer them in a 9x13 with cheese of choice(as much as a pound if you want), mushrooms, and a can of tomato sauce to splash around. The final touch is a cup of milk with an egg, salt and pepper. Mix it up and then pour over top. Bake at 350for 30-45 mins and whalah! My kids LOVE this. My mom made it for us growing up.

I'm not much of a cook, so I don't try alot of dinner receipes, but I do love the easy sides. Here's one that I thought was really odd, until I tried it. Use buns or English muffins (in half) and spread mayo over them, then add a large piece of canadian bacon (or even skip this) and a slice of mozzarella cheese and broil at a medium temp (275-300) for just a few minutes. The cheese will bubble and slightly brown. They are so yummy!

Bake - seve with a bag of pre-made Caesar salad.

OMG, what GOODIES!!

Cammie, the easiest thing to make for dinner is RESERVATIONS, LOL! Or, you can order a salad with breadsticks from Olive Garden then make some spaghetti with good ground beef (brown in a frying pan first...don't fry it because it will get hard). Cook pasta as directed on box. NEVER overcook it because it will get mushy. If it says 8 to 10 min. only cook it 8 because you will be reheating it. ADD some Italian seasonings (dried-in the herb aisle of the supermarket), The last thing is wine. Whatever people PREFER, red or white. Red is correct but who wants to be correct all the time????? Oh, for dessert you could order Olive Gardens Tiramisu, hmmmmmm. They have a special price for 6 slices I think.

You can also order Chinese food early in the day, put it in your pots and put out a bottle of Soy and Teriyaki sauce; who will know the difference, LOL. HTH & TFS.

The blog candy looks great. I enjoy looking at your blog and getting some great ideas. Would love to win your blog candy as haven't seen some of these stamps before. Great candy! I would love to give you a delicious family recipe for dinner, but alas, I am challenged in the kitchen. I can cook decent things, but nothing great. I do recommend the McCormick Cookbook though!(don't know the actual name) They have a scrumptious pork chop recipe that is SO easy and fast. And the pork chops don't come out dry! #98, Cambri first of all I want to tell you that I can't wait each day to check out your blog. You do such nice work. Ok my recipe to you is Chicken Cordon Bleu. It is not really that difficult and is very yummy! Flatten out some skinless chicken breasts. In 2 bowls scramble a couple eggs in one and flour in the other (add salt & pepper to flour)lay a slice of swiss cheese on the chicken, put a couple pieces of deli ham on the cheese, roll up and use tooth picks to hold roll together. Once rolled, dip in the egg mixture then the flour and fry in pan with oil just like you would cook chicken. YUM YUM!

line bottom of a 2 qt casserole dish w leaves of 1 sm head of cabbage cut into medium pieces

#101, Cambri-Your work is just wonderful. I can hardly wait for the next day to see your new stuff. My recipe to you is "Bologna Boats". Boil and mash up potatoes as you would for any meal. Lay out Bologna pieces on a cookie sheet. Put a scoop of mashed potatoes on each piece of bologna. Sprinkle shredded cheese on top of each. Bake in oven 325' just until cheese melts and the bologna will curl up and brown a little (about 10 minutes). Your kids will love them.

Happy Blog-a-Versary!

Here's an easy peasy recipe, my mom only made this or us when my dad went out of town for business... we had to eat big meals for him LOL. Yummie! Served 3 or 4...double the recipe for bigger family.

Tuna casserole, 1 glass bowl to oven... put all in bowl, mix, bake

1 can of Campbells Cream of Mush soup
1 can of milk (we used 2% then)
1 can of chunk light tuna
(brake up a bit, not too much)
1 can of chinese noodles
(save a few to sprinkle on top)
** sometimes these noodles come in packages (cans in US), they're hard little ones you can eat, add a good amount to thicken casserole and add substance)
Mix all ingredients, sprinkle a few chineese noodles on top of casserole.
Bake in 350 degree oven for 30 to 40 minutes, until top is nice and crispy, casserole is thick, not runny.

Serve alone, on toast or bun, or with salad. Chinese noodles cook up lovely and tasty !!

Easy peasy, 2 minutes prep time, very tasty, we loved this as kids!

Here's a recipe for you that's quick, easy, delicious, and only requires 6 canned ingredients!

Recycle the cans quick and tell everyone you slaved ALL day over the stove ... they won't have any reason not to believe you!

1 15 oz can whole kernel corn, drained
2 14.5 oz cans chicken broth
1 10 oz can chunk chicken (I use the light and dark mix for more flavor)
1 15 oz can black beans
1 10 oz can diced tomatoes with green chili peppers, drained.

Open the cans. Pour everything in a large saucepan or stock pot. Simmer over medium heat until chicken is heated through.

I serve it over tortilla chips but it's fine without it.

Your whole family will ADORE this; I promise! Quick and easy, easy, easy! Did I mention quick & easy!!!! You won't believe how delish this is, too--perfect for a chilly winter dinner. Course, I wouldn't know about 'chilly' winters but ...

Enjoy!!! Please enter me for a chance to win your goodies; they (like you!) rock!

If you like Thai food, this is a simple and yummy dish:
Thai Chicken:
(I usually double the liquid in the sauce and throw in some veggies like broccoli and red pepper when sauteing the garlic and onion.)
1 lb ground chicken
1 small white onion, chopped
8 cloves of garlic, minced
2 Tbls Fish Sauce
2 Tbls Soy Sauce
4 tsp sugar
2 tsp Red Pepper Flakes
Chopped Basil - (around 1/2 - 1 cup)
Olive Oil (or other oil)

First sauté the onion and garlic in some olive oil until soft but not brown.
Then set the mixture aside in a bowl. In a separate bowl mix the soy sauce,
fish sauce, sugar, and red pepper flakes. Brown the ground chicken. When
it is almost done but still a little pink, add the onion/garlic mixture back
in. Once the chicken is fully cooked, add the sauce and the basil. Saute
just until the basil wilts. Serve over rice.

Here's one of the best: Teriyaki Flank Steak: one flank steak (usually 1.5 - 2 lbs.) 1 10 oz. bottle teriyaki sauce; 1 10 oz. bottle italian dressing: mix sauce and dressing. place steak in baking dish or large ziplock bag. Pour sauce over steak. Let marinate for sev. hrs. turning occass. if steak isn't completely covered w/ sauce. remove steak from sauce. cook on grill or under broiler til desired doneness. also makes yummy leftovers for breakfast/ for example in scrambled eggs. :) enjoy!!!!!

Here's a really simple, but delicious pasta dish. I got the recipe from Everyday Foods:
Spaghetti with Three Tomato Pasta
(Serves 4)
Coarse salt and freshly ground black pepper
1 pound spaghetti
2 tablespoons sun-dried tomato oil, (from oil-packed sun-dried tomatoes)
4 cloves garlic, minced
1/4 to 1/2 teaspoon crushed red pepper
1 can (28 ounces) whole peeled tomatoes with juice
1/2 cup oil-packed sun-dried tomatoes, chopped
1 pound cherry tomatoes, halved
Directions
Bring a large pot of boiling salted water to a boil.
Heat 2 tablespoons tomato oil in a large saucepan over medium heat. Add garlic and crushed red pepper; cook until fragrant, 30 seconds. Add canned tomatoes with juice and sun-dried tomatoes. Simmer gently over medium, stirring occasionally and breaking up canned tomatoes until thick, 15 minutes. Add cherry tomatoes; simmer until soft, 10 minutes.
Drain spaghetti, reserving 1 cup pasta water; return pasta to pot. Add tomato mixture; season with salt and pepper. Toss, adding pasta water as desired. Serve immediately.

Happy Blogaversary!!! I just recently discovered your blog, though I have admired your stamping for a few years now. Your work always inspires me! :)

I am a terribly inconsistent cook (e.g., I vow to cook at home every night of the week, but then we end up eating out 4 of those evenings! :( As my friend Eeyore laments, "Pathetic"!). HOWEVER, I do know how to cook enough that I manage to keep my family alive on those off days when we stay at home. It just isn't my thing.

Here is a recipe for our family's favorite chicken. I have passed along this recipe to many people, and it has been our standby "company recipe" over the years. It's SUPER easy, and mighty yummy too. Hope that you'll enjoy it!

Swiss Cheese Chicken

(it's real name is something dorky sounding like "Creamy Baked Chicken Breasts," so we renamed it! :) we like our name better -- straightforward and to-the-point!)

4 boneless, skinless chicken breasts
4 slices Swiss Cheese
1 can Cream of Chicken soup (we use the light version)
1/4 cup milk
Stuffing mix, dry (I use Stovetop, out of the canister)
1/4 cup butter, melted

Place chicken in greased (Pam) 9x13 baking dish; place a cheese slice on top off each chicken breast. In bowl, mix soup and milk; spoon over chicken. Sprinkle stuffing (no measurement--I just do what looks good) over top; drizzle with melted butter. Bake in 350-degree oven for 50-60 minutes, until chicken is done.

I like to serve this with Uncle Ben's Long Grain & Wild Rice, baby carrots, and rolls. EASY, but yummy. Enjoy! :)

My favourite fast dinner is Swedish Meatballs with egg noodles.
When I am in a hurry I use frozen meatballs. Just throw a package of frozen meatballs in a covered cassorlle dish, add enough beef broth to cover, season with a diced onion, teaspoon of Mace, teaspoon of all spice, a crushed garlic clove and salt and pepper to taste. Stir in a large tub of sour cream and heat in oven for 30 minutes, add some cornstarch to thicken in the last few minutes. While the meatballs are in the oven cook the egg noodles just like you would spagetti.
Enjoy!

My favorite football sunday recipe: 2-3 pound roast in a crock pot, a dry packet of good seasons dressing, and a beer. Cook for 5-6 hours and serve on buns with provolone cheese! It melts in your mouth!

Anonymous said...

Oh, I have a supper easy dinner for you!! Take a nice beef roast, a bottle of beer and one package of Good Season's Italian dressing mix, (dry). Throw the roast in a crock pot, mix the beer and dry dressing mix together, pour over roast. You could add sliced onions or some bell peppers here too. Leave in crock pot for 8 hours on low. Roast should basically fall apart when done. Take out the roast and shred the meat with a fork. Add back to the juice in the pot and serve on nice crusty rolls or garlic mashed potatoes or buttered noddles. I really like it on roll and then add some cheese on top. (i like nacho cheese myself!). Happy Bogaversary!!

I would love to win this, so I am giving you one of my kid's favorite recipes. My kids call this "dfog food" - because of the look of it. Serve it over wide egg noodles.
Put stew meat in a crock pot, add one can of cream of mushroom soup (NO WATER) and one package of Lipton Onion Soup mix. Turn the crockpot on and let it do its thing for 5 hours or so -- serve over the noodles. It is soooo yummy!

Cambria,
Thanks for the opportunity...and congrats again! Here is one of my fave easy dinner recipes:

Mexican casserole:
Mom's Mexican Casserole
1 pound browned ground beef
1 can chili beans
1 can cream of chicken soup
4 oz. can tomato sauce
1/2 package taco seasoning
Nacho Cheese Doritos
shredded cheddar cheese

Brown ground beef, drain fat. Add chili beans, soup, tomato sauce, and taco seasoning and mix well. Place a layer of Doritos in the bottom of a 13x9 pan. Sprinkle cheese onto Doritos. Spread 1/2 of meat mixture on top of cheese. Repeat layers of Doritos, cheese and meat mixture. Top with cheese. Bake at 350 degrees for 15-20 minutes. Top with sour cream if desired.
Thanks!!

Lovin' the blog candy!

We've been into fajitas lately. Just cut chicken into strips and cook with a little oil. Add veggies - bell pepper, onion, broccoli, etc - and fajita seasoning. When it's done, wrap in tortillas with salsa, cheese, sour cream or whatever you like. Easy and yummy!
