Well, I'm sure I won't win since I am first, but someone has to be, right? Thanks for all of the inspiration you give to me and others!
One of my favorite things to cook is boneless pork ribs. I cook them in the crock pot with BBQ sauce, and they are fall-apart delicious!

Cambria, your blog is awesome. Congratulations on your anniversary!

Here's my favorite crockpot recipe:
CROCKPOT VOMIT
Put 1 cup salsa in crockpot, mix in 3/4 tsp. cumin.
Place 5 boneless chicken breasts over the salsa.
Pour 1 more cup of salsa over the chicken.
Drain and rinse 2 cans black beans, and pour over the mixture. Drain 2 cans of corn and pour over the mixture. Cook in crockpot 4 hours on high, or 6-8 hours on low.
Shred the tender chicken with 2 forks.
Stir 2 8oz. pkg. of chream cheese into mixture.
Serve over rice, with shredded cheese on top. Or place in flour tortillas for burritos.
My family LOVES this!!!

When it comes to slow cooking, I try to keep it simple!
Add some chicken breast, a little chicken stock, some spices (I'm on a curry kick right now!), some chopped potatoes, carrots and celery and it's a fool proof dinner!
Bonus- the smells in your house will have everyone looking forward to dinner.
Good luck!

*cream cheese, 2 8 oz. blocks *Ragu Pizza Quick Sauce *pepperoni *2 cups of mozzarella

Directions

1. Press cream cheese into a casserole dish (8x11.5 in).

2. Pour sauce on top, and spread to edges.

3. Top with pepperoni (you can also add onions, green peppers, sausage...whatever works on pizza -- you'd better grill the onions etc...first)

4. Heat in 350 degree oven for about 20 minutes.

5. Sprinkle mozzarella on top, and bake until melted.

6. Serve with Fritos Scoops.

Wow! What generous blog candy!

One of our favorite quick recipes is homemade pizza. The best pan to use is a cast iron skillet. http://www.santecookware.com/catalog/cat/4/0/0/Skookie+Skillets.html . This is the link to the skookie pans that we have that are our favorites to use for this recipe. These are perfect for individual sized pizzas (and yummy cookie treats too!). Anyway. . .

Pizza crust:
Mix 1 TBSP yeast, 1 TBSP sugar and 1 cup really warm water. Measure in 1 TBSP olive oil, 1 tsp garlic salt, 2 tsp italian seasoning and 2 cups flour (we like 1 cup white and 1 cup wheat). Mix and let rest for 10 minutes.

Preheat oven to 450*. Cut dough into even pieces. (This batch makes 5 "skookie" size pizzas). Pat, stretch, or roll dough to fit the bottom of the skillet. Drizzle olive oil lightly into the skillet. Press the pizza dough into the bottom of the skillet and up the sides. Bake 5-7 minutes till lightly browned. Remove from the oven. Spoon a large spoonful of spaghetti sauce onto the crust and spread it around. Top with a handful of shredded cheese, toppings of your choice (ham and sausage is super good), and a sprinkle of shredded mozzarella cheese.

For deluxe breadstick like edges, drizzle the very edges of the crusts with olive oil and sprinkle with grated parmesan (not the canned stuff though). Otherwise, just pop the skillets back into the oven and bake for 7-10 minutes until the crust is as browned as you like.

Remove from the skillet to cut and serve. Just be careful because the skillets stay hot for a really long time (you don't want to know how I know this!).

Enjoy! And happy blogiversary!

Before I left for work this morning, I put a roast in my crockpot, dumped in a packet of onion soup mix, two cans of cream of mushroom soup, and a little water and just let it cook on low until I got home. It made plenty of gravy and was great over egg noodles!

Wow! Congratulations! Okay, so my kids' favorite right now... is plain pasta with shredded chesse melted on top... kind of pathetic, but they love it! :)

I made this for a big family dinner when I had to bring the veggie. New recipe and it turned out yummy. - Toni W.

Zucchini-Carrot Casserole

3 medium zucchini
2 medium carrots
1 onion, chopped
2 cloves garlic, chopped
¼ C low sodium chicken broth
½ C light sour cream
4 oz reduced fat cheddar cheese, divided
½ tsp Morton lite salt
¼ tsp black pepper
½ tsp basil
¼ tsp oregano
¼ tsp onion powder
6 melba toast, crushed

Preheat oven to 350. Cut zucchini and carrots into thin slices. Coat a large skillet with cooking spray. Add onion to skillet and cook 1 minute. Add zucchini, carrots and garlic. Cook 1-2 minutes over high heat. Add broth and cook until vegetables are soft. Once veggies are soft and all liquid is evaporated, remove from heat. Stir in sour cream, 3 oz cheese, salt and pepper. In separate bowl, combine basil, oregano, onion powder and crushed melba toast. Top the zucchini mixture with melba crumb mixture and remaining cheese. Bake for 15 minutes, or until cheese is melted. Serve hot. Makes 6 - ¾ C. servings.

Happy Blogaversary! Your site is a great source of inspiration for me. Thanks for posting all of your great creations and tutorials. We love this...

Bacon Cheeseburger Pasta
8 ounces uncooked spiral pasta
1 pound ground beef
6 bacon strips, diced
1 can tomato soup (don't dilute)
1 cup shredded cheddar cheese
Cook pasta according to package directions. Meanwhile, in a skillet, cook beef over medium heat until no longer pink; drain and set aside. In the same skillet, cook bacon until crisp; remove with a slotted spoon to paper towels. Discard drippings. Drain pasta; add to the skillet. Add soup, beef and bacon; heat through. Sprinkle with cheese; cover and cook until the cheese is melted. Serve with barbeque sauce and mustard if desired.

My favorite cooking tip: When I buy ground beef, I brown a lot and freeze packages of 2 1/2 cups each. Then I can use a package for any recipe that calls for browned ground beef. (I also do this with ground turkey or a mixture of both.)

Wow! Congrats again on your anniversary! I love your blog!

One of the easiest recipes I can give you is to put chicken in the bottom of the crockpot (frozen is ok), put campbells creamed soup on top of it. The next layer is stove top stuffing, and top with carrots. It's delicious!

Thanks for the chance! Here's to another year!

I love making home made barbeque pork sandwiches. I always cook my pork roast in the crockpot. You just add a little bit of water and let it cook until it is falling apart. It is so tender and easy to mince with two forks then. Add your favorite sauce (my sauce is also homemade) and enjoy.

Here is a family favorite for breakfast or a snack.

1 1/2 c sugar
1/2 c butter
3/4 cup sour cream
2 scant c flour
2-3 ripe bananas
2 eggs
1 tsp salt
1 tsp soda
1 tsp vanilla
Cream butter and sugar. Add eggs and sour cream. Stir in mashed bananas and vanilla. Add dry ingredients. Bake in a 9 x 13 jelly roll pan that has been greased and floured. Bake at 375 for 30 minutes. You can glaze with powdered sugar frosting if you want.

Hi Cambria your blog is soo wonderful! I look foward to your next post almost daily! Happy ONE year BLOGAVERSARY!! Heres my recipe for fool proof beef stew. I start with beef cubes rolled in flour and put in a large deep skillet with a little oil add sliced onions cubed potatoes and sliced carrots. Then add just enough water to cover the potatoes and sprinkle 1 package of french onion soup mix and stir. let simmer for about 45 min to 1 hour. you always have thick gravy because of the floured beef cubes. soooo easy to make! Be sure to make a pan of cornbread to go with it!

(#33, I think)I love your blog! I have gotten so much inspiration out of it. Here's to another wonderful year!

Here is one of my favorite easy recipes that I got from a roommate so the measurements are pretty loose. Easy to adjust to your personal taste.

Taco Casserole
1lb ground beef
1 small can corn, drained
1 jar salsa (you want around 16 oz, more or less up to you, and chunky works better than really watery)
1/3 cup Miracle Whip
taco chips, crumbled
grated cheese (a taco mix works great)

Brown the beef, drain if necessary. Mix together with corn, salsa and miracle whip. Pour half into a casserole dish. (I try to use a deeper dish that isn't so wide so I cut down on extra fat.)
Top with crumbled taco chips and grated cheese. Layer on the other half of the beef mixture and repeat the taco chips and cheese.

Bake in the oven at 350F for around 20-30 minutes. Make sure that the cheese is completely melted on top and you see bubbling around the edges, otherwise the middle will still be cold.

This is even better reheated the next day. You could add beans, sour cream on top, jalapenos, whatever you enjoy. One of those things that you can have things ready for so you just throw it together and bake it, and it is something you could get your kids to help assemble because crushing tortilla chips is definitely fun!

What a generous give-away! One of my favorite recipes is pork barbacoa (similar to Cafe Rio's for those of you who live near one). Place a pork loin in the slow cooker, top with a large can of mild red enchilada sauce and 2 C. brown sugar. Cook on low for 8 hours. Shred and serve in tacos, burritos, or salad with beans and rice. Yummilicious!

Favorite recipe--cola chicken. Place 4 boneless, skinless chicken breasts in skillet. Add 1 cup ketchup and 1 can coke (I use diet). Add some garlic and chili powder to taste. Cook about 45 minutes. The ketchup and coke make a wonderful barbeque sauce. Recipe is very low in calories! Just printed out your directions for peppermint patties--so cute! Thanks for all of the inspiration!

Congrats on your one year anniversary! Thanks for sharing !
OK here is my favorite appetizer recipe for parties. It is soooo good - I mean it's based on a Paula Deen recipe. :)
(The original recipe I was going to follow was from Paula Deen on the
Food Network. But her recipe called for using a "mini" brie wheel and I
didn't think it would be enough to serve for a "party". So I modified
her recipe but kept the walnuts and cinnamon parts. Though her recipe
seems to have a prettier result!)

Ingredients:
1 frozen puff pastry sheet (Pepperidge Farm)
1 Tablespoon unsalted butter
1/8 teaspoon ground cinnamon
1/4 cup brown sugar
1/2 cup walnuts
1 wheel brie (15 oz)
1 egg, beaten
Crackers/french bread slices

Directions:
1. Thaw out pastry sheet for 30 minutes at room temperature and unfold.

2. Preheat oven to 400F

3. Melt butter and add walnuts. Brown for a few minutes stirring
frequently. Be sure not to burn them.

4. Mix in cinnamon and take off heat.

5. Roll out pastry sheet or use fingers to press sheet out a little.

6. Place brie in middle of pastry and place walnut mixture on top of
the cheese. Sprinkle brown sugar over mixture.

7. Gather up edges to cover the brie and walnuts. Make sure there are
no 'holes'.

8. Beat an egg and add a little water. Brush egg all over the pastry
mound.

9. Spray cookie sheet with a little Pam. (the pastry dough is buttery
enough but use Pam so it'll come easily off the cookie sheet when you
are done)

10. Place brie en croute on cookie sheet. Bake for about 20-30 minutes
until golden brown. (may take longer/shorter depending on oven)

11. Let it sit for 1/2-1 hour.

12. Serve with slices of french bread/melba toast/crackers. I think
french bread slices is good even though there is that pastry dough. You
need something thick for the cheese ooze!!

Here's an awsome recipe for "homemade chicken pot pie". My kids go crazy for this...

1 (10-3/4 oz.) can cream of potato soup
1 (10-3/4 oz.) can cream of chicken soup
15 oz. can veg-all veggies, drained
1-1/2 c. cooked diced chicken
1/2 c. milk
1/2 tsp. black pepper
2 (9") frozen pie crusts, thawed

Combine all ingredients. Spoon into prepared pie crust. Cover with top crust. Crimp edges to seal. Slit top crust. Bake at 375 degrees for 40-45 minutes. Cool 10 minutes before serving.

Enjoy!!!

OMGosh...I am thrilled that you are giving everyone a chance to win a Simply Send Card Set from Stampin' UP! YAHOO!!! For that, I will reveal my chicken salad recipe. I hope none of my friends notice this because I make it at every party and they love it. That is how I keep em comin back! LOL!
Ingredients:
4 large boneless chicken breasts
Mayo to taste...we like a bunch at least a cup or 2!
2 tablespoons lemon juice.
2 small diced celery stalks
1/2 small onion chopped finely
dash garlic powder
dash Lawry's Seasoned salt

Boil chicken until completely cooked. Run cold water on the chicken enough to cool it to make it easier to cut. I like to cut mine in 1/2 inch cubes. add all the above ingrediants while chicken is still warm. We eat it while it is warm on pita bread. Just fill the pockets and munch away. If you try this and do not like it...I will eat my hat!!! Not once have I fixed it that it was not the hit of the party and everyone begs me to make it. So this is my grand recipe. And even if I do not win. I am glad to have shared it with you. (I really hope my friends don't see this! LOL!)

1. Melt butter in a large frying pan over medium heat. When bubbly, add chicken. Cook, uncovered, until light golden, about 4 min per side. Meanwhile, peel peaches if you wish, then slice into thick wedges. Thinly slice pepper.

2. Once chicken is golden, add peach wedges, pepper slices, orange juice, curry powder and salt. Turn chicken to coat. Reduce heat to medium-low. Cover and simmer, turning occasionally, until chicken feels springy when pressed, about 6 to 8 min. Remove from heat. Sprinkle with green onions. Delicious with roasted potatoes and green beans.

Here's another recipe - so easy, & everyone ALWAYS wants to know how I made it! Brownie Trifle - layer 1/2 pan of prepared brownies in bottom of trifle bowl, then 1/2 prepared (lg.) package of chocolate pudding mix, then 1/2 (lg) Cool Whip. Repeat layers. That's all there is to it!

Ugh. Not Costco. I have to go tomorrow. Here is my recipe. Someone sent it to me in an email years ago. Very yummy cookies.

Neiman-Marcus Cookies

2 cups butter
2 cups sugar
2 cups brown sugar
4 eggs
2 tsp vanilla
4 cups flour
5 cups blended oatmeal (fine powder)
1 tsp salt
2 tsp baking powder
24 oz chocolate chips
8 oz Hershey bar, grated
3 cups chopped nuts

Cream butter and sugars. Add eggs and vanilla; mix with flour, oatmeal, salt, baking powder and soda. Add chocolate chips, Hershey bar and nuts. Roll into balls and place 2 inches apart on cookie sheet. Bake 10 minutes at 375F. Makes 112 cookies.

Congrats on your blogaversary, Cambria! I love Costco as well... but I try to go when there are not a lot of people (and since hubby works there, it is easy to know when it's not busy!).

I'd offer up a recipe, but I am not a very savvy cook. Still learning though!!! Huggs and have a fantastic week!

Hi Cambria! Congrats again on your anniversary, and thanks again for all the great inspiration. I just placed my SAB order, and it includes a mat pack so now I can paper pierce as beautifully as you do!

Here's a simple recipe that makes two servings. I think they're a really tasty, quick snack. (From Eating Well)

Corn & Tomato Pizzas

2 tsp extra-virgin olive oil
1 Tbsp chopped garlic
2 plum tomatos, diced
1/4 cup fresh or frozen corn kernels
1 tsp red wine vinegar
pinch of salt
pinch of pepper
2 6-inch whole wheat pita breads
4 oil-cured black olives, pitted and chopped (I leave these out because I don't like olives)
1/2 cup shredded mozzarella
2 Tbsp chopped fresh basil (a sprinkling of dried works just as well)

Preheat oven to 450F. Heat oil in a medium skillet over med-high heat. Add garlic and cook until fragrant and golden, stirring constantly. (30 sec to 1 min) Add tomatoes, corn, vinegar, salt & pepper. Cook, stirring often, until heated through, 2-3 minutes.

Place pita breads on baking sheets and bake until crisp, about 5 min. Top with tomato mixture, olives, and cheese. Bake until cheese melts, about 5 min. Sprinkle with basil, cut into wedges, and serve.

Sweet Potato "Fries"

peeled sweet potatoes cut into strips
2-3 tablespoons of olive oil
pinch of cayenne pepper
1 tsp chili powder
pinch of red pepper flakes
1 tsp garlic powder
1 tsp onion powder
1 tbsp lime juice
1 tbsp Dijon mustard

Toss ingredients together until sweet potato strips are coated. Place on baking sheet and bake in 400 degree oven. Turn strips and bake for 10 - 15 minutes more. Serve and enjoy! These are a bit spicy so adjust flavours to your own taste.

You are a super inspiring and talented artist! I really admire your work, Cambria! The only thing I like in the crockpot is potroast, red potatoes, carrots, pkg of Lipton onion mix, 2 bay leaves and a little coarse sea salt and cook on high for at least 6 hours, 8 if possible. I make brown gravy with the trimmings and put out horseradish since the dh adores it on roast. Thanks for the fun!

lately i've been cooking a whole chicken in my crock pot, they tend to fall off the bone if left in too long, but it's still delicious and great for chicken salad

but my favorite crock pot recipe is this (i don't even know what to call it):

1 pkg (appr 1 lb) of beef stew chunks
1 can cream of mushroom
1 can cream of celery
1 can French onion

add them all to the crock pot, turn on high, cook for 4 hrs--it's really soupy when it's finished

if i know there won't be any left overs, i add a 16 ounce bag of egg noodles and cook them on high until they're al dente

if i think i might have left overs, i thicken it slightly with cornstarch and water and serve over cooked egg noodles or rice

my husband and children (4 and 2) love this...it's a big hit when i have friends over for dinner too

Cambria your blog is fantastic, Our favourite Meal is Roast Dinner, Beef with yorkshire puddings. To make the yorkshire puddings, Mix 100g Flour with one egg and 50ml of water. Place a cake tray with individual sections in the oven with a touch of olive oil in each cake space. Heat for a few minutes then add the Batter mix to each section. Heat in the oven until risen. Now you have yorkshire puddings. Lovely with gravy and roast potatoes.

A quick recipe when I'm out of inspiration....
Slick chicken and mushrooms.

Preheat oven to 375. Place chicken breasts in a casserole (square pan or glass pan). Open a can of Campbell's mushroom soup. Pour in a bowl, mix in 1/2 can of milk. Mix milk and soup well. Pour evenly over the chicken pieces. Cook in oven for approx. 45 minutes. You can broil for a few minutes when done. You can also cover the chicken with shredded mozzarella (after cooking) and broil until the cheese is melted and golden.

Serve with white rice and veges.

2 cups (8 ounces) shredded Monterey Jack cheese
6 green onions, finely chopped

One of our favorite chili recipes is: 3lbs. of hamburger Fried and
drained and rinsed
3 cans of tomato soup
3 cans of Brooks Chili Hot
Beans
Onion Flakes, salt, pepper
and chili powder to taste
1/2 can of large can of
tomato juice.(I freeze the
other half for the next
time I make chili.

We let it simmer most of the day and then eat it that evening or after simmering a couple of hours, put it in the refrigerator and serve it the next evening. It is much better the second night after it has had time to "blend" flavors.

I think I left a soup recipe last time, but we also LOVE Roast Beef Sandwiches! I had these at a friend's house for Super Bowl and HAD to have her recipe! SO, now you have it too!

Crock Pot Roast Beef Sandwiches
Roast Beef Sandwiches

1 rump roast (approx 3-4 lbs)
1 can Campbells French Onion Soup
2 can Campbells Beef Consomee
1 can Beef Broth (if you need more liquid)
Sara Lee Deli Rolls
Butter
Provolone Cheese Slices

Because I let this cook in the crock pot ALL DAY, I usually trim that little layer of fat from the bottom of the roast. I also trim it because I want to use my juice later for dipping!!! I don't want to dip into all the fat!
Place Roast into crockpot season with salt and pepper. Add all the liquid and cook all day! I usually cook it on high for the first half of the day and then turn it down for the rest of the time. (if it is frozen, I leave it on high all day!) When it is done, take it out of the crockpot and shred into a bowl. Add a couple of ladles of liquid to keep it moist. Cover and set aside.
Butter your Sara Lee Deli Rolls and place under broiler to toast. You can use a toaster over or whatever you have. Once the rolls are toasted, place your provolone cheese on the roll and add your roast beef. Fill small bowls with the leftover juice from cooking your roast! Dip your sandwich and eat! It is SOOOOOO good! I always wondered how you made authentic tasting AuJus! This was it! Give it a try and let me know if you love it as much as we do!!!

-1 can cream-style corn
-2 cups frozen corn
-1 cup frozen shredded hashbrowns
-1 cup diced cooked ham
-1 can cream of something soup (I've used mushroom and chicken and both were great)
-1 medium onion, diced

-2 teaspoons dried parsley
salt and pepper, to taste

Cook on low for 6 hours (mine was in for 8 1/2 hours).

How 'bout some good ol' fashioned chicken soup? Whole chicken (either use whole or buy already cut up, but important to keep it on the bones for flavor) 1 pkg gizzards & livers, carrots, celery, seasonings, & let fresh parsley float on top while it simmers. That's what's on the menu for today at our house.

Cambria,
I love your blog and your generosity. I tried one of the recipes from last week myself for the Swiss Cheese Chicken, Yummo!!
Swiss Cheese Chicken
4 boneless, skinless chicken breasts
4 slices Swiss Cheese
1 can Cream of Chicken soup (we use the light version)
1/4 cup milk
Stuffing mix, dry (I use Stovetop, out of the canister)
1/4 cup butter, melted

Place chicken in greased (Pam) 9x13 baking dish; place a cheese slice on top off each chicken breast. In bowl, mix soup and milk; spoon over chicken. Sprinkle stuffing (no measurement--I just do what looks good) over top; drizzle with melted butter. Bake in 350-degree oven for 50-60 minutes, until chicken is done. I like to serve this with Uncle Ben's Long Grain & Wild Rice, baby carrots, and rolls. EASY, but yummy. Enjoy! :)

I personally would change to baby swiss because of my kids and possibly would put a piece of ham on it too and make it a cordon bleu chicken.

For Dessert we did the best thing this time of the year and ran through McD's and got Shammrock Shakes around, again Yum!!

I'm happy to share it with you, but I've been sworn to secrecy by the family (professional) chef so it'll have to stay between you and me.

Here's my favorite (super easy) recipe:

Dr. Pepper Cake

1 box Red Velvet cake mix
1 12oz can of Dr. Pepper

Mix together and bake as directed on cake mix box. Frost with Cream Cheese frosting.

You can use any cola (Coke, Pepsi, Mr. Pibb, Dr. Pepper) with chocolate cake mix or Sprite/Ginger Ale with a white or yellow cake mix. And if you want to reduce the calories you can use diet soda. Makes a very moist, fluffy cake.

Awesome blog candy yet again! Here's a great recipe, especially for a crowd:

Chicken Salsa Lasagna
5 boneless chicken breast halves cut in small pieces
1 med. onion, chopped
1 small green pepper, chopped
4-5 garlic cloves, crushed
600-700 ml. jar of salsa sauce (roughly 2 ½ -3 cups of salsa)
250 ml. whipping cream
4 cups shredded mozzarella cheese
Lasagna Noodles (partially cooked)

Cook chicken with garlic; add onions and green pepper. Add salsa and let simmer. Remove from heat and let cool for 5 minutes, then add whipping cream.
Put some chicken sauce on the bottom of baking pan. Sprinkle a bit of mozzarella cheese to cover. Add layer of lasagna noodles. Repeat layers (sauce-mozza-noodles, sauce-mozza-noodles) however thick you wish. Finish with a layer of mozzarella cheese.

Cook covered @ 375° F for 30 minutes then uncover and cook for another 15 minutes until brown.

Note: 1 recipe usually makes one 9x13 pan and one 8x8 pan.

Love your blog!!!
I love to cook......
Simple chicken Breasts
Chicken breast with bone and skin
butter or oleo
lawry season salt
one reynolds cooking bag

Rinse chicken off, put a spoon full of butter under the skin of the breasts then sprinkle some lawrys season salt. Place in the cooking bag and cook for 1 hour at 350- 375.
You will have some of the most tasty and moist chicken. This is my husbands favorite.
