I was just wondering.....was that 'blottle' of beer on purpose or a typo? You brought a smile to my sick (been down with the 'flu')face this morning. Thank You!!! - March 3, 2008 at 6:38 AM

A think a trip to Costco is worth a trip to the ortho, but that's just me. Now, which one was more expensive?? :) Here's my recipe for awesome chili:
1 1/2 - 2 lbs. of lean beef (I usually use a package of stew meat, or a london broil cut into bite sized pieces)
Marinate the beef overnight with a blottle of beer.
Dry the beef on some paper towels. While beef is resting, chop up 1 green bell pepper, 1 medium onion, 3 celery ribs, and 2 cloves of garlic.
In a large pot, brown the beef in 2 tbsps of oil, then throw in the veggies; cook until the veggies are crisp-tender. Now dump in 2 cans of dark red kidney beans, (drained and rinsed)1 can of diced tomatoes, and 1 large can of crushed tomatoes.
Add 3-4 tbsp of chili powder, 1 tbsp of cumin and S&P to taste.
(My kids don't like anything spicy, so this is a very mild chili; add more spices to suit your family)
Cover and simmer for at least 45 minutes, up to 2 hours.
We love this over rice, with cheese on top.
Thanks for the awesome blog and all your hard work. Looking forward to another year of great blogging!
