YESTERDAY was Wednesday Blog Candy.... DUH!

Sorry about that.... I totally spaced it was Wednesday YESTERDAY... that Monday holiday threw me off big time!

This week's blog candy is the eP exclusive set from Stampendous called Hey There Cupcake! There will also be some extra goodies, but I don't have them photographed... trust me, you will like. :)

I LOVE this set...... it's AWESBOMB indeed. Look at the options for cupcakes. I've been swamped making swap cards, but I'll put together my cupcake cards this weekend. LOVE this set... hope you do too.

Leave a comment, any comment. Of course recipes are ALWAYS appreciated. In fact, I've tried a few and SHAZAM, they are winners. I'll share those later next week, but you can check out the previous blog candy comments to get some GREAT recipes. Thanks so much for sharing girls!! Thanks too for helping me celebrate my one year Blogaversary!

Have a super day! I'll draw a winner from Random.org on Sunday. :)

I'm really the first?! Awesome. Thanks for the opportunity to win some wonderful blog candy.

How about a recipe for Seven Layer Dip? First layer, refried beans. Second layer, 2-3 mashed avocados. Third layer, mix together 1/2 c. mayo plus 1 c. sour cream plus 1 envelope taco seasoning mix and spread. Fourth - seventh layers, shredded cheddar cheese, tomatoes, green onions and olives. Serve with chips.

Yummy!! Take care - Regina Davis in sunny Portland, Oregon

Corn Chowder
2 1/2 cups milk
1 can creamed corn
1 can cream of mushroom soup
1 1/2 cups frozen corn
2 cups frozen shredded hashbrowns
1 1/2 cups cubed cooked ham
1 onion chopped

Add to crockpot and cook on low for 6 hours. Easily doubled....we like soup with lots of stuff in it so I generally add more frozen corn, ham and hashbrowns so that there is lots of stuff and not so much soup.

This is such an easy and delicious recipe that you'll feel guilty if my number doesn't win!

This was made up by my friend so there are no measurements. You just have to eyeball it!

Betsy's Chicken and Stuffing (with Alfredo and Pesto)

Boil chicken w/salt & Pepper. Save the stock
Moisten stovetop stuffing with some of the stock
Tear up chicken and mix with alfredo sauce, some stock and salt & pepper. (I added a sauteed portabella mushroom and zucchini to the mixture)
Layer stuffing, chicken mixture, stuffing in baking dish
Mix together melted butter with garlic (saute), some stock, and pesto
Pour on top.
Bake at 350 / 45 minutes to 1 hour

This is delicious!!!

And now for a recipe:

Spicy chicken nachos

1 bag tortilla chips
2 cups shredded mexican blend cheese
2 cups cubed cooked chicken
1 1/2 tbs taco seasoning
4 oz sour cream
1/2 tsp cilantro

Preheat oven to 425. Spread chips in an even layer on a baking stone. In a medium bowl, mix cheese, chicken, and 1 tbs of taco seasoning. Spread over the chips and bake for 7-10 minutes until cheese is melted.
In the meantime, put sourcream, cilantro and 1/2 tbs taco seasoning in a ziplock bag. Seal the bag and mix. When the chips have finished baking, snip one corner of the bag and use it as a decorating bag to drizzle the sour cream mix on to the chip.
Variation: Add chopped pepper or salsa on top for a different flavor.

LOVE your blog and LOVE this set. As for recipe..do you like fish? Last night I made an easy Tilapia. You need one piece per person, some flour, some kalmata olives, some green onions, garlic, olive oil and a pint of grape tomatoes, cut in half. Coat the fish in flour and salt and pepper. Heat pan with olive oil and add fish. Cook about 3/4 minutes per side and then remove and set aside. Add a bit more olive oil to pan and saute the green onions (I use about 3 for a meal serving 3 people) and 2 gloves of garlic minced. Add the tomatoes and cook until they are soft. Then chop up about 10/12 kalmata olives (buy the pre-pitted ones for ease) and add until just warm. Add fish back in to warm up and serve. Super fast and easy and good!

If you are like me, I always have ripe bananas hanging out at my house. I always used to make banana bread with them, but then I came across this recipe from allrecipes.com

Banana Chocolate Chip Cake

1 1/2 c. flour
2/3 c. white sugar
1 1/2 t. baking powder
1/4 t. salt
1 cup mashed bananas
1 egg
1/2 c. unsalted butter, melted
1/4 c. milk
3/4 c. chocolate chips semisweet

Bake at 350. Grease 9 x 13 pan.
Mix all dry ingredients in large bowl.
In medium bowl, mix bananas, egg, butter, and milk.
Stir banana mix into flour mixture, don't overmix.
add chocolate chips.
30 to 35 minutes, or until toothpick inserted comes out clean.

I also have added peanut butter chips to the mix with the chocolate chips and they are awesome too!

Ooh, more great stuff. I had tried to order that set when it first came out (and of course was out of stock soon after)... have seen some gorgeous stuff with it!

As for a recipe: Pick up a jar of Ragu reduced fat Parmesan alfredo. Heat, adding some chopped ham and a few handfuls of frozen peas. Boil pasta, and suddenly you're a wonderful chef :) (Seriously, though it is scrumptious. Also good with chopped chicken breast and fresh broccoli)

Since this is such fabulous blog candy such a great blog, I'm attaching a recipe from kraftfoods.com for a somewhat healthy chicken potpie I made for my sister's family. I haven't had it, but my sister said her family (six kids -- ages 2-12) liked it a lot.

Gram's Chicken Pot Pie Updated
Prep Time:
10 minTotal Time:40 min
Makes:
6 servings
2 Tbsp. KRAFT Zesty Italian Dressing
1 lb. boneless skinless chicken breasts, cut into bite-size pieces 2 cups frozen mixed vegetables
1 can (10-3/4 oz.) condensed cream of chicken soup
1/4 lb. (4 oz.) VELVEETA, cut up
1 sheet frozen puff pastry (1/2 of 17.3-oz. pkg.), thawed
1 egg, lightly beaten

PREHEAT oven to 400ºF. Heat dressing in large skillet. Add chicken; cook and stir 5 min. or until cooked through. Stir in vegetables, soup and VELVEETA. Spoon into greased 9-inch square baking dish.

UNFOLD pastry sheet; place over chicken mixture. Fold under edges of pastry; press onto top of baking dish to seal. Brush pastry with egg. Cut several slits in top crust to permit steam to escape.

PLACE dish on baking sheet. Bake 30 min. or until deep golden brown. Let stand 5 min. before serving.

The nutrition info is on the site. I used FF dressing, LF Velveeta and LF soup.

I love that cupcakes are all the rage now in stamping!!

This is not really a family dinner, but if you ever get an in home date night, it's so easy and delicious!

Generously salt and pepper two filet mignon steaks. Brown each side in a hot pan, about a minute on each side. Add equal parts red wine and balsamic vinegar (maybe 1/4 c. each) to the pan and cover. Cook 4 minutes on each side, basting with the sauce when you turn the steaks.

That's! Just serve it with the sauce spooned over the filets and with garlic mashed potatoes and green beans or your favorite side. So delish!

2 8 oz packages softened cream cheese

Hi Cambria -
Here is a recipe from my coworker that she saw on the food network for spicy macaroni and cheese. It is awesome ...just like you and your blog!

Spicy Baked Macaroni
Recipe courtesy Giada De Laurentiis

Salt
1 pound elbow macaroni pasta
3 tablespoons extra-virgin olive oil
1/2 pound assorted mushrooms, quartered
1 onion, chopped
2 cloves garlic, chopped
1 (14.5-ounce) can diced tomatoes
1 (10-ounce) package frozen spinach, thawed and drained of excess liquid
1/2 teaspoon red pepper flakes
1/2 cups bread crumbs
1/4 cup grated Parmesan, plus 1/3 cup
1/4 cup Romano, plus 1/3 cup
2 tablespoons butter, softened, plus 2 tablespoons
12 ounces mozzarella cubed (about 2 cups)
1/4 teaspoon freshly ground nutmeg

Preheat the oven to 350 degrees F.
Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta.

In a large skillet, heat the olive oil over medium heat. Add the mushrooms, onion, and garlic. Cook until the mushrooms are tender and the onion is golden, about 7 minutes. Add the tomatoes, spinach, and red pepper flakes. Stir to combine and cook until heated through, about 5 minutes.

In a small bowl, mix together the bread crumbs, 1/4 cup Parmesan, and 1/4 cup Romano. Spread the softened butter in a 9 by 13-inch glass baking dish and sprinkle half of the bread crumb mixture inside the dish to coat.

In a large bowl combine the vegetable mixture with the cooked macaroni, cubed mozzarella, the remaining Parmesan and Romano cheeses, and the nutmeg. Spoon into the prepared baking dish, top with the remaining bread crumb mixture, and dot the top with the remaining butter. Bake until the top is golden brown, about 30 to 40 minutes.

I love, love, love this set. I'm in a cupcake card swap on Splitcoast right now and I looked for this set but none of my LSSes had it!

Here's a recipe for you:

Sweet and Sour Stir-fried Pork

1 pound pork tenderloin (can substitute chicken, beef or tofu if preferred)
1/2 cup cornstarch
2 tsp Chinese 5-spice
1/2 sweet onion (Vidalia or other), sliced
1/2 red pepper, sliced in bite size pieces
1 cup chopped broccoli flowerets
1 cup asparagus (or other seasonal vegetable), sliced in bite-size pieces
4-5 mushrooms, chopped
1 cup fresh or canned pineapple chunks
Sweet and Sour sauce of your choice.
Canola oil

Cut meat into bite-size chunks. Put cornstarch and Chinese 5-spice in a large ziplock bag and add meat. Shake bag vigorously to coat meat.

Heat large wok or skillet on medium-high heat and coat with canola oil. When hot add meat and stir-fry until browned on all sides. Remove from pan and set aside.

Coat pan with additional oil and add the vegetables. Stir-fry for 4-5 minutes until crisp-tender. Add sweet and sour sauce to taste (don't put in too much - just enough to coat the vegetables in the pan). Add in pineapple and meat and cook for another 5-10 minutes depending on how crisp you like your vegetables.

Serve over rice, noodles or mashed potatoes.

This set is wonderful. I have a recipe that my husband just made this week. I was skeptical, but it turned out to be great. I don't usually eat things like this, but they are great. He added salted pecans to the mix because he add pecans to everything like this. I eat around them so he can enjoy them all.

Cajun Pretzels

1 16 ounce bag pretzels
3 /4 cup oil
1 pkg. ranch dressing mix
1 teaspoon garlic powder
1 teaspoon red cayenne pepper

Mix seasonings together with oil in a large bowl using a wisk. Add pretzels and stir until pretzels are well coated. Divide into 2 metal baking pans and bake at 200 degrees for 2 hours, stirring every 30 minutes. Let cool and store in an airtight container.

Notes:
* we were told the $1 bag from Wal-Mart is best because they are less salty and the stuff sticks to them better, but we used regular small pretzels

*you can add more cayenne pepper if you like things really hot!!!

* they do not seem to be hot when you first start eating them, but as you go they will get hotter and hotter.

I love the cupcake stamps!!!!! (I love cupcakes too....) I'll give a cooking tip...marinate your meat in wine vinegar...(I like to marinate steak in raspberry wine vinegar)...it will tenderize your meat and you won't need to season with salts. (You won't taste vinegar or raspberries, I guarantee you!) There are lots of fun herb / flavored vinegars on the market!

Bake just like a cake.
After they are cooled ice and decorate. I love decorating them with stamped items also.

#95 Great set! I'm a newbie to your blog so I don't know if you've gotten this recipe before. It's for a taco bake.
Make a pound of taco meat
While you're browning the ground beef, combine 2 packages of Jiffy Cornbread mix, 2 eggs and 2/3 c of water in a separate bowl. Once these are mixed, stir in a can of cream style corn.
Use a tall square casserole dish or a long rectangular dish and layer 1/2 of the cornbread mixture, the taco meat, the rest of the cornbread mixture and top with some cheese of your choice. Bake this at 400 degrees for 30-45 minutes. I got this from a friend of mine who made it for a potluck recently and it was a big hit! Another girl made a black bean salsa that was very tasty with it, but perhaps I'll have to save that for next time ;-) Happy blogging!

What a great stamp set! Here's a great recipe that I tried out last week at a family birthday and it was a huge hit!
Cookie Dough Cheese Ball
8 ounces cream cheese (softened)
1/2 cup butter
1/4 teaspoon vanilla
1/2 cup powdered sugar
3 tablespoons brown sugar
3/4-1 cup miniature semisweet chocolate chips
3/4 cup chopped pecans(optional)
Blend first three ingredients until cream.
Add powdered sugar and brown sugar, mix well.
Fold in chocolate chips.
Cover and refrigerate 3-4 hours.
Shape into ball, wrap in saran and refrigerate 30 mins or more.
When ready to serve roll in pecans.
Serve with graham crackers or teddy grahams.
Enjoy!

Yummy & zero calories...Super! Here's my recipe:

Chicken Ju Ju (named by a child)

2-4 chicken breasts
2-4 slices swiss cheese
1/4 - 1/2 cup of white wine per your taste
1 can Cream of Chicken soup
1 pkg Pepperidge Farm Herb Seasoned dry stuffing mix
melted butter

Place chicken breasts in baking pan. Put one slice of swiss cheese on each chicken breast. Mix wine with Cream of Chicken soup and pour over chicken & cheese. Next sprinkle stuffing mix over all. Finally, drizzle with melted butter. Eek, can't remember how long I cook this....I think I put in a 375 degree oven for about 45 minutes till brown on top. Enjoy!

Pick me! Pick me! :)

We've been eating fajitas lately. There's not really a recipe, per se. Cut up some chicken and/or drain and rinse black beans. Cut up a ton of onion, bell pepper (we prefer red, yellow or orange), broccoli and whatever else sounds good. Saute the chicken in a bit of olive oil until just about cooked, then add everything else. Cook to your liking. We like the veggies fairly crunchy, so we use less time than you might. Serve with whole wheat tortillas, shedded cheese, salsa and sour cream.

Well, I don't know what you thought about the email I sent you last week about the Kraft Food & Family magazine, but here's a recipe we tried from it last night!

Foil-Pack Taco Chicken
Prep Time: 10 min
Total Time: 50 min
Makes: 4 servings, one packet each

4 small boneless skinless chicken breast halves (1 lb.)

4 tsp. TACO BELL® HOME ORIGINALS® Taco Seasoning Mix

1/2 lb. red potatoes, thinly sliced (about 2 cups)

1/2 cup TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa

3/4 cup KRAFT 2% Milk Shredded Reduced Fat Four Cheese Mexican Style Cheese

1/4 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream

PREHEAT oven to 400°F. Sprinkle chicken with seasoning mix. Place 1/2 cup of the potatoes on center of each of four large sheets of heavy-duty foil; top each with chicken, salsa and cheese.

BRING up foil sides. Double fold top and both ends to seal each packet, leaving room for heat circulation inside. Place in 15x10x1-inch baking pan.

BAKE 30 to 35 min. or until chicken is cooked through (165°F). Remove packets from oven. Let stand 5 min. Cut slits in foil to release steam before opening. Serve with sour cream.

We eliminated the potatoes, and I made a corn casserole to go with it instead. Also, I didn't really bother measuring any of the ingredients... just eyeballed everything. Hope you like!

I love recipes. How about one for super moist, yummalicious pancakes? We found this recipe about 2 years ago and it has quickly become a family favorite!

Banana Sour Cream Pancakes
( Barefoot Contessa, Food Network)

1 1/2 c. flour
3 Tbsp. sugar
2 tsp. baking powder
1 1/2 tsp. kosher salt
1/2 c. sour cream
3/4 c. + 1 Tbsp. milk
2 extra large eggs
1 tsp. pure vanilla extract
1 tsp. grated lemon zest
unsalted butter
2 ripe bananas, diced

Sift together the flour, sugar, baking powder, and salt. In a separate bowl, whisk together the sour cream, milk, eggs, vanilla, and lemon zest. Add the wet ingredients to the dry ones, mixing only until combined.

Melt 1 Tbsp. of butter in a large skillet over med. low heat until it bubbles. Ladle the pancake batter into the pan. Distribute a rounded Tbsp. of bananas on each pancake. Cook for 2-3 minutes, until bubbles appear on top and the underside is nicely browned. Flip the pancakes and then cook for another minute until browned. Serve with sliced bananas and syrup!

Preheat the oven to 400, then throw the cut veg into baking dish and mix w/ EVOO and salt and pepper. Roast for 20-30 min. It's healthy and filling. We are trying to be healthy!

That is a really cute set. I don't own any cupcake stamps and these seem to be the thing to have right now. As for a recipe......I just got this one from a friend yesterday. I've never made it, but I've had hers and it's good. It doesn't sound like something I would have tried on my own but I really liked it for something different!

Wild Rice Almond Soup

2Tbl. Oil
1/2 C. Shredded Carrots
Couple shakes of Minced onion or real if you prefer!
8 oz. cubed ham
1 Pkg. Uncle Ben's Fast Cook Wild Rice
2- 14 oz. cans of Chicken Broth
2 Cans of Evaporated Milk
2 Tbl. cornstarch
1 small pkg sliced almonds

Heat oil in pan. Add carrots and onion and saute a couple minutes until carrots are tender. Add ham, rice and Chicken Broth. Bring to a boil. When rice is ready, mix your cornstarch with some of the evaporated milk and add it to the pot. Add almonds.
She added a note that said sometimes she adds some regular milk to make it the consistency that she desires. She also adds milk to make it spread farther if having company or taking it to church.
Doubling this recipe will fit into a large crock pot.

Hope you enjoy it! I thought it was a nice change of pace from having Chili and Corn Chowder!!

I have been going back and forth between this set and the Stampin Up one. I am obsessed with cupcakes right now, just made some Banana Creme Pie Cupcakes that were so delicious!
I am going to leave you my FAMOUS RICE~A~RONI SALAD. Sounds terrible but it is always the biggest hit

1 box chix Rice a Roni cooked per box

chix breast (can use rotisserie, or packaged)usually 2 breat or more per box. Chopped into bite size pieces

green onions chopped 1 bunch

artichoke hearts (trimmed of leaves, just the heart part)

black olives small can

juice from the artichokes

mayo

salt & pepper garlic salt

Mix everything together add in the mayo (it takes a lot) stir it around, add small amt art juice , mix, more mayo and seasoning, mix keep going until it gets to a consistency you like. Ref 2 hrs or longer and remix before serving. You may need to add more mayo.

You can customize it by adding more of what you like and less of what you don't. I usually double the recipe because its so good the next day:!

This isn't really a good recipe for a main course, but I LOVE this soup. It's from a Carnival Cruise cookbook I got about 8 years ago when I took a cruise to the Caribbean.

Chilled Strawberry Soup

Ingredients

2 cups strawberries
2 cups milk
1 cup whipping cream
½ cup sour cream
sugar

Place all ingredients in blender container. Blend on high until smooth. Add sugar to taste. Chill overnight. Serve in chilled soup cups.

Thanks for the opportunity to win some amazing cupcake stamps. Congratulations on your blogiversary.
