Blog Candy Time!


Hey everyone! Hope you are having a great weekend! I had a great Friday in Eugene with My Mom. We got some shopping done, hit Costco, and we grabbed a quick lunch with Marianne Walker from Copic! Guess what she gave me? Yep! She gave me a big ole handful of Copic Markers to give away to my readers! How cool is that? Marianne is the greatest! Thanks Marianne!!

Love your giveaway! Thanks for the chance. Crockpot Pork:

Salt and pepper pork tenderloin
Cover with shake and bake for pork
add slices of onion, carrots and 1 tsp. parsley. cover 1/2 way up with water. Add 1 can of cream of mushroom soup (diluted with 1/2 can milk). Cook till pork is fork tender.

Like many other recipes, I throw in a can of cream soup and veggies with the beef roast I had browned. Browning the beef helps keep the juices in.

Ooohhh awesome blog candy! I love using the crock pot - it always makes life easier! However lately, I'm into using it for "appetizers" or other foods. This has become a weekend staple thanks to the football playoffs!

Buffalo Chicken Dip
2 (8 oz) Cream Cheese
3 cups shredded chicken (or 3 large cans)
1 cup ranch dressing
1/2 cup red hot sauce
Mix all in crock pot and heat on slow setting of crock pot until warm throughout. Serve with tortilla chips or Ritz crackers.

I haven't caught the copic craze but this just might do it! I have caught the crockpot craze, though and here's one of my favorites (and I really enjoyed reading the others!) Hope this isn't a repeat:

Slow Cook Peanut Butter and Hot Fudge Cake

1/2 cup all-purpose flour
3/4 cup granulated sugar, divided
3/4 teaspoon baking powder
1/3 cup milk
1 T vegetable oil
1/2 tsp. vanilla
1/4 cup peanut butter
3 T unsweetened cocoa powder
1 cup boiling water

Combine flour, 1/4 cup sugar and baking powder. Add milk, oil and vanilla. Stir until smooth. Mix in peanut butter. Pour into crock pot and spread evenly.
In the same mixing bowl, stir together the remaining 1/2 cup sugar and cocoa powder. Gradually stir in boiling water. Pour mixture over batter in crock pot. Do NOT stir. Cover and cook on high 2-3 hours or until a tootpick come out clean. Serve warm with vanilla ice cream if desired. Warning: You may want to double this recipe as your family will want seconds. . .

Tortilla Pie
¾ lb. ground round
¼ cup chopped onion
1 garlic clove – chopped
½ pkg taco seasoning
1 can Mex diced tomatoes
¾ cup part skim ricotta cheese
1 cup shredded Mex. Cheese
4 tbsp fresh chopped Cilantro
4 flour tortillas (9 in.) (divided)

Fry beef, onion, garlic. Add tomatoes and taco seasoning. Bring to boil; remove from heat. In a bowl, combine Ricotta cheese and ½ cup shredded Mex. Cheese and 2 tablespoon of cilantro. Place one tortilla in 9” round pan coated with non-stick cooking spray. Layer with ½ of meat mixture, 1 tortilla, all the ricotta cheese mixture, 1 tortilla, the rest of the meat
mixture, top with tortilla, sprinkle with rest of shredded
cheese (1/2 cup) and cilantro. Cover and bake @ 400 for 15 minutes or until heated through.

Low fat – You can substitute ground round with ground turkey.


My favorite recipe. It is wonderful in the summer. I don't know where we found it we didn't make it up. Just try it. If you email me I can send it to you on a recipe card that is on Microsoft Word.

Shredded Crock Pot Beef

1 (5 or 6) lb. sirloin tip roast
1 pkg. au jus gravy packet
¾ c. water
2 pkgs. brown gravy mix
1 pkg. onion soup mix

Cook roast with water, onion soup mix, and au jus packet for 6 to 8 hours. Cool in refrigerator and strain off fast. Mix in 2 pkgs. brown gravy mix and cook on low until warm. I cut the roast into small pieces before putting it in the crock-pot.

Just thought you might want this one.

I mostly use my crockpot for soups and stews. We don't eat a lot of beef, but when I find a roast on sale I but a 6 to 8# one and cut the meat into chunks. I put some flour and salt/pepper in an bowl and then roll the meat in the flour and sear the meat. Once the meat is cool, I put about 2# in a freezer bag so I can make beef stew or stroganoff in jiffy. My stroganoff is really easy; bag of meat, undiluted can of cream of mushroom soup, can of mushrooms.

Here's my recipe:

It has no name

chicken
salsa
can of corn (drained)
can of black beans (drained)

let it cook. fork the chicken apart. Right before you serve it, stir in cream cheese. Serve in tortilla shells with taco toppings (lettuce, tomato, ched. cheese)

Here's something easy for the football playoffs:

melted cheese (you can buy already melted or melt your own), sour cream, then top off with salsa then dip w/chips.

I am totally all about using the crockpot. I tell my husband that it gives the appearance that I know how to cook. LOL! Here is my lasagna recipe... I totally made this one up, but it really is good. :-) It makes a lot, so you need to either invite someone over for dinner or freeze half of it.
1 lb ground beef
1 lb Italian sausage
¼ cup red wine
1 tbsp Italian seasoning
Salt
Pepper
1 onion chopped
2 cloves garlic, crushed

Combine all and cook in skillet until done. Drain and rinse. Return to skillet and add the following:

1 jar spaghetti sauce
1 cup red wine
1 tbsp basil
1 tbsp oregano
¼ tsp crushed red pepper

In a mixing bowl combine the following:

2 cups Ricotta cheese
2 cups cottage cheese
2 cups Italian blend cheese
¼ cup Parmesan cheese
¼ cup chopped parsley
4 eggs
1 tsp salt
¼ tsp pepper

In Crockpot layer the following:

¼ cup sauce on bottom
Lasagna noodles (uncooked)
1/3 cheese filling
1/3 meat filling
Lasagna noodles… repeat, ending with meat sauce on top.
Cover and cook on low for about 6 hours.

OK Cami, this is your "winning" recipe:
TURKEY VEGETABLE SOUP
1 lb ground turkey
1 16oz. bag frozen vegetable for soup with tomatoes
1 can diced tomotoes
1/4 t salt
1/4 t pepper
2 can beef broth
1/4 c flour

Brown the turkey. Mix one c broth with flour till mixed well. Add to turkey and add all other ingredients. Bring to a boil, then cover, reduce heat, and simmer 20-30 minutes minutes.

Here's a crock pot cobbler that is delicious and easy to make. Take 2 cans of pie filling (any flavor) and dump it into the crock pot. Pour a box of yellow cake mix on top. Drop 4 T of butter cut up into bite size pieces on top and set the crock pot on low for 4 hours. Tastes great.

Hope I'm not too late for the blog candy.

Hi C - love, love, love your blog! You inspire my own creativity! I love my copics but am perfecting my technique daily. I love the "G" chocolate box idea, thanks. Great, super easy recipe for a crowd - Equal parts of "Coke" & "Ketchup" added to chipped-chopped ham!!! It makes the best barbeque-flavored ham sandwiches - I turned my nose up at first - then I tried it!!! mmmm...

Love the chocolate box! This isn't gonna' work in your crockpot, but it is yummy!


Craisin Ball
1 8 oz. block cream cheese
1/2 C. chopped craisins
1/2 C. chopped pecans
2 Tbs. orange juice
2 Tbs sugar
orange zest
Mix together and roll in pecans if desired.
I have also used the orange flavored craisins and omitted the OJ and zest.
Serve with graham cracker sticks.

I always use Lipton onion soup with a cup of water and add it to the beef. Cook all day in the crock pot. I love the way the house smells so good when something is cooking in the crock pot. Thanks for the chance to win the Copics.

I love to make black eyed peas. But when you are done it is more like a soup than just eating beans. you take and saok dry beans overnight, and when you put in crockpot add quite a bit of chicken stock and tiger seasoning,and salted pork then about 4 hrs before serving add just a little cream. and it thickens up and the beans break down into a soupy mixture.
